A rich holiday favorite made Skinny, Dark Chocolate Fudge with Pomegranates and Hazelnuts!

Well, first off I hope everyone had a wonderful Thanksgiving yesterday and made some fun memories!

I know we did! Mike and I ended up going to the Cowboys/Eagles Thanksgiving Day game, but if you follow me on Instagram you would know that already. 🙂 We had a blast and it is definitely something neither one of us will ever forget!

With today being Black Friday and all I wanted to make sure you weren’t in a Turkey comma anymore so I thought I’d give you a jolt of energy with this  Skinny Dark Chocolate Pomegranate Hazelnut Fudge!

Todays recipe was inspired by the ever so fun monthly recipe challenge I am a part of called Mystery Dish. This months ingredients were “hosted” aka picked by Rebecca from Living Better Together! The ingredients she picked this month were: Hazelnuts, Pork Belly, Dark Chocolate, Cranberries, Bourbon, Red Potatoes, Pimento Cheese, Ginger, Yogurt, French Bread, Buckwheat, and Rice Krispies.

As soon as I saw the ingredients my eyes lasered in on the dark chocolate, so that was my starting point. I was thinking of making a bark of some sort because I’ve seen alot on Pinterest lately but then wanted to be a little different.

Fudge is that rich dessert that only makes its lovely divine and delicious appearance around the holidays.

Usually fudge is made with loads of chocolate, sweetened condensed milk, butter and then whatever else you want to add to it. Last year I made a Dark Chocolate {are you sensing a love of dark chocolate yet} Mint Fudge. Seriously amazing with the mint flavor, plus I will use any excuse I can to add Andes candies to things. 🙂

This time around I wanted to make a guilt free or Skinny version of fudge and let me tell you. I nailed this one… if I don’t say so myself. Oh wait .. I did!

Instead of sweetened condensed milk and butter I used almond butter and coconut oil to make it “fudge-like” and then honey for the sweetener. Even though this fudge is “healthy” it seriously still has that rich chocolately taste that everyone loves about fudge.

And like most things I make… I had to add a little “crunch” or texture to my fudge. So added hazelnuts, dried cranberries, and pomegranates.

On a side note, since I started cooking/baking making sure that I balance the texture in each dish, my food has transformed. Instead of just getting all crunchy or all soft, your mouth is teased with the different flavors and feels of the ingredients you add to the dish.

This Skinny Dark Chocolate Fudge would make the perfect dessert for the holidays with that fun pop of red from the pomegranate. It totally needs to make an appearance at your Christmas or New Years Party.

Or, if you are like me and make gift baggies for the neighbors or family friends then you need to make sure to include this fudge with all those cookies!

Description

This Dark Chocolate Fudge with Pomegranates and Hazelnuts is a rich holiday favorite made skinny!


Ingredients

Scale
  • 8 oz. of dark chocolate {I used a bar}, melted
  • 1/4 cup of honey
  • 3/4 cup of coconut oil
  • 1/2 cup of almond butter
  • 1/4 cup of pomegranates
  • 1/3 cup of hazelnuts, chopped
  • 1/2 cup of dry cranberries

Instructions

  1. Grease a 8×8 glass pan with coconut oil.
  2. Put dark chocolate in a large bowl and put in microwave for 30 seconds at a time, stirring after each time until it is melted.
  3. Add coconut oil, honey, almond butter, hazelnuts, and dry cranberries.
  4. Stir until smooth.
  5. Pour fudge mixture into greased pan, sprinkle with pomegranates on top.
  6. Place in a refrigerator for 2-3 hours.
  7. Slice and serve.

Notes

** When removing fudge from the pan, let fudge sit a bit (2-3 minutes). Using a knife dipped in hot water and wipe clean after each slice.

    1. Hey Katie, you could use cashew butter, peanut butter, or even nutella because its a hazelnut chocolate butter – but just know the nutritional count will change. šŸ™‚ Hope that helps!
