Ok, this recipe is for all you moms out there.

When Cason was little he used to eat vegetables like it was his job. There was not a vegetable he didn’t try. I loved it and felt like I was supermom getting my kid to eat vegetables.

Surely he would be that way for all time.

Oh what a delusional world I lived it.

Little man turned two and a half and decided that he all of a sudden didn’t want vegetables. All he wanted was Mac and Cheese.

Ugh.. mom fail.

I was determined to sneak in any vegetables I could to his diet and this Skinny chicken Alfredo with Broccoli I was hoping would do the trick.  The day came and I cooked everything up, plated it and sat down with my little guy to see what would happen.  He looked at it and the first thing out of his mouth.

“Mommy I don’t like it”.

So of course I jumped right in there with logic, because we all know that two and half year olds understand and exude logic.

“Buddy you haven’t even tried it”.

His response remained the same.  So sometime over the next couple of minutes of begging and pleading he allowed a bite to slip into his mouth.  “Mommy I like it, its good.”

For all of you out there who have had the joy of living with a two year old you will understand, that phrase, all be it, few and far between is one of the most rewarding you can hear.  I’m hoping you have the same success as I did.

Description

This Skinny Chicken Alfredo with Broccoli is such an addicting pasta recipe! It feels like a dish straight out of Italy, and it’s super easy to make in just half an hour!


Ingredients

Scale
  • 16 oz. of fresh spinach pasta (I got mine at Sprouts, but you can get it at most grocery stores)
  • 2 cooked chicken breasts, cubed
  • 2 cups of broccoli florets
  • Cauliflower Alfredo Sauce
  • salt & pepper to taste

Instructions

  1. Make Cauliflower Alfredo Sauce, put into a large saucepan over low heat to keep warm.
  2. Bring a large pot of water to a boil, add broccoli florets. Cover and cook for 2-3 minutes until they turn bright green – scoop florets out of water and place in a bowl of ice water to shock the broccoli and stop the cooking process.
  3. Add fresh spinach pasta to the same boiling water you added broccoli too. Cook pasta for 2-3 minutes – or whatever the package instruction say.
  4. Remove pasta from water and place in large saucepan with cauliflower alfredo sauce, add broccoli and chicken to the saucepan as well. Gently toss with tongs till everything is coated with the alfredo sauce.
  5. Serve.
