Balsamic Vinegar Adds A Ton Of Flavor To This Salmon

This time I changed up the sauce and used my absolute favorite way to add flavor to a dish. BALSAMIC VINEGAR! Ya’ll I could drink the stuff! I probably use it way to much at home, but you know what, I don’t care! I own the fact that I’m a balsamic addict!

The sauce for this one is pretty simple, it’s just Balsamic Vinegar, Honey, fresh thyme, garlic, and a little bit of mustard. Whisk that together and you’re good to go.

I decided to go with Salmon as the protein for this one, because why not!

One of my little tricks when I’m running low on inspiration is to pull out my Flavor Bible! And no, I’m not making that name up! It is a book my mom gave me for Christmas one year and I absolutely love it … it really is called “The Flavor Bible.” It is basically an encyclopedia of food and ingredients. It tells you which ingredients go with which flavors, foods, spices, etc.

IT’S AWESOME!

What Ingredients Are In This Sheet Pan Salmon Recipe? 

In fact, I learned that Asparagus and Salmon compliment each other really well in that book. So when I was trying to figure out which vegetables to use as the base I knew I wanted asparagus and brussels sprouts, then I added in some potatoes for the carbs.

Everything about this Sheet Pan meal is dreamy! It has the sweet factor from the balsamic and honey, but still has the savory element from the dijon, thyme, and veggies!

Your going to adore everything about this meal and so will your family!

How Long Does Sheet Pan Balsamic Salmon Take To Make?

I mean really.

What’s not to love about a meal that you can throw everything onto one pan put in the oven and be done 30 minutes later! {Insert awkward silent moment!}

Description

Sheet Pan Balsamic Salmon with Asparagus & Brussels Sprouts is an easy dinner that is done in 30 minutes. It’s the perfect healthy recipe!


Ingredients

Scale
  • 4 4-6oz salmon filets (skin on)
  • 16 oz. brussels sprouts, halved
  • 1 bunch on asparagus, trimmed and cut in half
  • 16 oz. bag of baby potatoes
  • 1/2 red onion, cubes
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 garlic clove, minced
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat oven to 450.
  2. In a small bowl, add honey, balsamic vinegar, dijon mustard, garlic, fresh thyme, and salt. Using a whisk, mix together to combine. Set aside.
  3. To a large bowl, add brussels sprouts, asparagus, baby potatoes, red onion, cherry tomatoes and olive oil. Add 3 tablespoons of the honey balsamic mixture.
  4. Using your hands, toss all of the vegetables to coat them with the sauce.
  5. Spread vegetables out on baking sheet in a single layer.
  6. Bake for 10 minutes.
  7. Remove from oven.
  8. Place salmon filets, skin side down, on top of the vegetables 1″ apart.
  9. Brush the salmon with the honey balsamic mixture.
  10. Place baking sheet back in the oven and bake another 10 minutes.
  11. After that switch to broiler HIGH for 3-4 minutes to brown up the top of the salmon.
  12. Remove from oven and serve

    I had really high hopes for this recipe. But the veggies DO NOT COOK in this amount of time. I had to pick out all of the potatoes and put them back in for another 15 minutes (and this was after quartering them instead of leaving them whole for fear this would happen). I’d recommend boiling the potatoes for a little while before putting them into the roasting pan. Also, the balsamic was a bit much for me (and I followed the exact recipe) so I’ll be omitting that next time. Otherwise, this recipe was easy and tasty 🙂
