Easy Rotisserie Chicken Tacos

These Easy Rotisserie Chicken Tacos are a quick weeknight dinner idea your whole family will enjoy. Using shredded chicken and a few fresh ingredients makes these chicken tacos delicious and healthy!

Easy Rotisserie Chicken Tacos

Happy Friday!  I hope ya’ll are super excited that it is officially the weekend, I know I am!  But, before I party hearty, I also have ALOT of work ahead of me.  Tomorrow is the draft for my fantasy football league.  That’s right, you heard me correctly!  I am in an all ladies fantasy football league, and have been for 3 years now!  It is so fun to be a part of, and it totally helps me get into the mood for football season. {and believe me, I have to find a way to get into it because my husband has NFL Sunday Ticket which means Football ALL DAY Sunday}  Anyways, with all the late night cramming tonight prepping for tomorrows draft to ensure that I have one kick butt team I needed a quick and easy meal to whip up.

These Rotisserie Chicken Tacos Are A Tasty Healthy Dinner 

Now, normally I’m not a fan of buying the Rotisserie Chicken that they sell in the store, but I didn’t have time to cook one up. {so I caved and bought one :)}  All you have to do to make these Rotisserie Chicken Tacos is pull off the white meat, shred it and then throw it in the taco shell with the toppings.  UM… yeah, that’s it.  Easiest meal ever!  You will love these Chicken Tacos and it is perfect if your looking for a healthy quick weeknight meal!

How To Make Rotisserie Chicken Tacos

To get started, pull off all the white meat from one cooked rotisserie chicken, shred the meat and set aside.

Next, thinly slice half of 1 red onion and julienne 1 red pepper. Heat a large saute pan to medium high heat, add 1 Tablespoon of olive oil, sliced onions, and red peppers to pan. Season with salt & pepper. Saute for 5-6 minutes or until onions are translucent and peppers are slightly crispy.

Crumble 1/2 cup of queso fresco, set aside.

Assemble the tacos on white corn tortillas.

Add desired amount of shredded rotisserie chicken, red pepper & onion mixture, queso fresco, avocado, and finish with fresh lime juice. Enjoy!

Ingredients

  • 1 rotisserie chicken, shredded {use white meat only}
  • 2 limes, quartered
  • 1/2 cup queso fresco
  • 1/2 of a red onion, thinly sliced
  • 1 red pepper, julienned
  • 1 Tablespoon of olive oil
  • salt & pepper
  • 2 avocado, diced
  • white corn tortillas

Instructions

  1. Pull off all the white meat from a cooked rotisserie chicken, shred the meat and set aside.
  2. Heat a large saute pan to medium high heat, add olive oil, sliced onions, and red peppers to pan. Season with salt & pepper.
  3. Saute for 5-6 minutes or until onions are translucent and peppers are slightly crispy.

  4. Ummmm- yeah, have I mentioned that I have a real obsession with shredded meat??! YUM!!!!!!!! Oh & I’m such a huge football fan- I am getting so excited about seeing NFL games again & college games starting for us next weekend.
