The weekend the weather was absolutely gorgeous! I can start to see little glimpses of fall coming to Texas! (happy dance)

In the mornings it was cool, low 70’s, with a breeze. In the afternoon it warmed up to around 80’s but with a breeze and no humidity! Woot Woot!

So with all the “cool” weather I thought it was time for our first soup of the season! Can I get an amen!

I big puffy heart soup! When I was pregnant with Cason I literally had soup and salad probably every single day because that’s what I was craving. {not a bad thing to crave I know :)}

In May of this year, I went to Portland for a conference, we went to a lot of pretty amazing restaurants while I was there. One of the places was a hotel bar and restaurant, yup, even the hotel restaurants are good there. It’s a foodie town for sure! I got this incredible Creamy Cauliflower Soup that had crunchy cabbage on top with a drizzle of chili oil. I was completely in love and knew it was going to be one of the first soups I would make this fall!

This Roasted Fennel Cauliflower Soup it packed with flavor. Whenever you roast vegetables in the oven something magical happens to them. They turn into tender sweet deliciousness! Best way to eat your veggies for sure!

How Long Does Cauliflower Soup Take To Cook?

After you roast the cauliflower and fennel just add them to the pot with the aromatics (aka onions and garlic), fresh thyme, and vegetable broth then simmer away. The longer this cooks the more the flavors meld but it can easily be done in 20 minutes once all the veggies are in the pot, if you’re in a hurry!

Towards the end of the cooking process I added in a little milk to make it creamier and then blended it with my immersion blender. I had one mishap though. My immersion blender broke half way through blending the soup, it was a sad day. A very sad day! (still crying about it)  So I definitely need to go out and get another one because I make A LOT of soups this time of year. If you don’t have an immersion blender, slowly add the soup to a blender in segments and blend until smooth.

It’s hard to say what my favorite part of this soup is. I go back and forth between the chili oil on top or the crispy bacon on top. Both add so much to the dish, one adds a nice spicy element and the other adds texture.

This soup is comforting, creamy, healthy, spicy, and all around delicious! It would be great along with a simple salad, a chunk of bread, or just by itself. However you serve it, you need to prioritize this soup recipe as one of your front runners this fall! I can’t wait to hear what you think! Bon Appetite my friends.

Description

Creamy Roasted Fennel Cauliflower Soup with Crispy Bacon will be the star of the fall! This soup is packed with rich roasted flavor then topped with chili infused oil and crispy bacon.


Ingredients

Scale
  • 2 medium heads cauliflower, cut into florets
  • 2 bulbs of fennel, roughly chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1 tablespoon chili infused olive oil
  • 1 cup diced red onion
  • 3 garlic cloves
  • 4 cups low sodium vegetable broth
  • 1 cup 2% milk
  • 1 tablespoon fresh thyme
  • salt and pepper to taste
  • 6 strips smoked bacon, diced
  • optional: top with additional drizzle of chili oil

Instructions

  1. Preheat oven to 425.
  2. Add cauliflower and fennel to baking sheet, season with olive oil and 1/2 teaspoon of salt.
  3. Place in oven and roast for 15-20 minutes, until vegetables are tender.
  4. Heat a medium skillet to medium high heat, add bacon and cook until crispy. Approximately 5-7 minutes. Remove from pan and let cool on a paper towel lined plate.
  5. Heat a dutch oven or large saucepan to medium high heat. Add chili oil and red onion. Saute until translucent, about 3-4 minutes.
  6. Add garlic to dutch oven, saute for 30 seconds. Add roasted cauliflower, fennel, fresh thyme, and vegetable broth.
  7. Bring to a boil and reduce to simmer. Simmer for 20 minutes.
  8. Add in milk, salt, and pepper to taste. Simmer for another 5 minutes.
  9. Blend up soup using an immersion blender or slowing ladling soup into a blender and puree in shifts.
  10. Serve soup with crispy bacon and top with a drizzle of chili oil and fresh thyme.

Just so you know…..not sure if this is just my computer but when I choose the print recipe option the five gray boxes to the left for facebook, twitter, pinterest, etc block the recipe and cover it up when printed.
