I don’t know about you, but as a new year starts I always get excited! It’s time to leave the successes and disappoints of the last year behind us and wipe the slate clean.

For those organizational freaks like me, it’s like receiving a brand new planner in the mail. It just makes me giddy.

Living a healthy life style is usually at the top of most peoples, “goals” for the new year. And it’s usually at mine too. I try to build upon the success I had the year prior.

One of the areas I usually fall short in is the breakfast department. I’m notorious for having a granola bar, an energy bite, or a cup of coffee for breakfast. I know I know … I’m hanging my head in shame as I tell you. Because I KNOW that breakfast is the most important meal of the day. It’s the meal that kickstarts your metabolism and if you don’t eat it, or don’t maximize it your basically shooting yourself in the foot.

So this year my goal is … MAXIMIZE Breakfast time.

When it comes to pancakes I could take it or leave it. I think part of the reason is I just feel like there’s no nutritional value in them. It’s just a big …. delicious … pile of wheat that makes me feel bloated and full.

Well, today I’m solving that problem. I’m adding the nutrients back into pancakes, increasing the flavor and making them worth starting your day with! These pancakes are fluffy, use less than 10 ingredients, are made in the blender, and contain CHOCOLATE!

Description

These easy pancakes are packed with chocolate flavor and a hefty dose of protein!


Ingredients

Scale
  • 1 large banana
  • 2 whole eggs
  • 2 tablespoons almond milk
  • 1/3 cup white whole wheat flour
  • 3 tablespoon Burt’s Bee Protein Healthy Radiance – Chocolate
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Add all the ingredients to a food processor or blender. (if you add the wet ingredients first it mixes better)
  2. Blend until the mixture is smooth and the consistency of pancake batter. (you may have to scrap it down the sides a couple of times.)
  3. Heat a large skillet to medium heat.
  4. Spray with PAM cooking spray. Add batter to the pan. Cook each side of the pancake for 1-2 minutes.
  5. Serve with syrup and sliced bananas.
