Description
Cheesy Parmesan Truffle Fries are the perfect snack or party app when you’re feeling a little fancy. Baked in the oven and super crispy!

- 5 russet potatoes, sliced into thin fries 1/4″ thick
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon truffle salt
- 1/3 cup of grated parmesan cheese
- 1/4 cup chopped chives
- optional: Truffle Aioli
Instructions
- Preheat oven to 400°F.
- Add sliced potatoes to a large bowl of water, soak for 30 minutes.
- Drain the potatoes, lay on a baking sheet and pat down with a paper towel to dry.
- Add dry potatoes to a large bowl along with olive oil, garlic powder, and truffle salt. Toss to mix everything together.
- Place potatoes in a single layer on two baking sheets. They will have to be on separate racks when you place them in the oven.
- Bake 15 minutes. Using a thin metal spatula, flip the fries. Rotate the baking sheets between racks. Continue to roast until brown, another 15-20 minutes.
- Remove from oven when they are slightly browned and crispy.
- Season with salt or truffle salt as needed. Sprinkle with parmesan cheese and garnish with chive.
- Optional: serve with Truffle Aioli or Ketchup
