Description

Cheesy Parmesan Truffle Fries are the perfect snack or party app when you’re feeling a little fancy. Baked in the oven and super crispy!


Ingredients

Scale
  • 5 russet potatoes, sliced into thin fries 1/4″ thick
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon truffle salt
  • 1/3 cup of grated parmesan cheese
  • 1/4 cup chopped chives
  • optional: Truffle Aioli

Instructions

  1. Preheat oven to 400°F.
  2. Add sliced potatoes to a large bowl of water, soak for 30 minutes.
  3. Drain the potatoes, lay on a baking sheet and pat down with a paper towel to dry.
  4. Add dry potatoes to a large bowl along with olive oil, garlic powder, and truffle salt. Toss to mix everything together.
  5. Place potatoes in a single layer on two baking sheets. They will have to be on separate racks when you place them in the oven.
  6. Bake 15 minutes. Using a thin metal spatula, flip the fries. Rotate the baking sheets between racks. Continue to roast until brown, another 15-20 minutes.
  7. Remove from oven when they are slightly browned and crispy.
  8. Season with salt or truffle salt as needed. Sprinkle with parmesan cheese and garnish with chive.
  9. Optional: serve with Truffle Aioli or Ketchup
