I’ve always wanted to eat the “exotic” fruits. You know, fruits like –> Passion Fruit, Dragon Fruit, Star Fruit, Rambutan (the spiky one), or Guava. But every time I see them in the grocery store, I’m all like …

“ugh… how to you get the fruit out.”

So I chicken out and don’t buy it. Well folks, not anymore! These weird looking, strange named fruits are treasures of sweetness that you NEED to try!

When we were in Ecuador my sister in law opened me up to a whole new world or fruits! She made a fruit salad to put on top of our french toast that was divine! It had papaya, dragonfruit, passion fruit, and all kinds of goodies that I never knew about.

I watched her carefully as she cut each fruit so I could do the same thing when we got home!

Ecuador has THE BEST juices you will ever have. They are all made from scratch daily and have the perfect amount of sweetness. You don’t order soda, ice tea or water when you’re there. You go for the good stuff, the JUICE, using all those crazy looking fruits.

Some of our favorites while we were there were Maracuya (Passion Fruit), Mora (Ecuadorian Blackberries), and Tamarillo (Tree Tomato).

We went to this one Restaurant in the jungle that my nephews call, “the fish place.” You can guess what they are know for. 🙂 They have a tilapia pond in the back of the restaurant, so when you order fish. They go back to the pond, catch it, season it, and throw it on the grill (bones and all).  It is the freshest fish you will ever have! Anyways, this restaurant had my favorite juice concoction. It was Mora juice and Coconut Juice. OMG! I wish I could replicate this somehow back home. Seriously so good.

I knew that when we got home I was going to start using a few more fruits than I usually do. One of those fruits was Passion Fruit.  Everywhere we went in Ecuador, something on the menu had Maracuya, or Passion Fruit on it.

How to Prepare your Passion Fruit

Passion Fruit kinds looks like a large seed. It is grown on trees and very common in South America, but as you can see we do sell it in our US grocery stores. (usually by the mango) To get to the good stuff, all you have to do is slice it in half and then scoop out the orange seeds. That’s it.

I know right!?!? Way easier than you thought, huh! (just make sure you don’t get any of the white lining) You get about 1-2 tablespoons of seeds in each fruit, so keep that in mind when you’re buying them.

Now because I have a sweet tooth. And I’m gonna slowly ease you into fun exotic fruits I made this Paleo Vanilla Panna Cotta and topped it with fresh Passion Fruit.

Why I Love This Panna Cotta Recipe

This recipe has NO refined sugar in it, and literally only has 5 ingredients! The Panna Cotta is made from Coconut Milk, which makes this recipe dairy free!

What I love about Panna Cotta is that it satisfies that sweet tooth. It is slightly sweet, but oh so creamy! The tart Passion Fruit on top perfectly compliments all the flavors in this dessert! You’re gonna be in love! I guarantee you, and you don’t even have to feel guilty about it!

Description

This Vanilla Panna Cotta Recipe with Passion Fruit is a creamy and slightly sweet panna cotta recipe that’ll quickly become your new favorite dessert! It’s guilt free, too!


Ingredients

Scale
  • 2 cups of full fat Thai Kitchen coconut milk (from the can)
  • 1½ teaspoon of unflavored gelatin
  • 1 teaspoon of vanilla
  • 2 tablespoons + 2 teaspoons of raw honey
  • 3 passion fruit, cut in half and seeds scooped out

Instructions

  1. Add 1 cup of coconut milk to a medium saucepan along with unflavored gelatin.
  2. Let sit with heat off for about 10 minutes, until the gelatin starts to become soft.
  3. Heat saucepan to medium high heat, add remaining 1 cup of coconut milk and honey. Whisk together until ingredients are dissolved.
  4. Remove pan from heat and whisk in vanilla extract.
  5. Let panna cotta sit for 10 minutes to cool down.
  6. Pour coconut mixture into 4-6 serving dishes.
  7. Cover each dish with plastic wrap, making sure wrap does not touch the coconut mixture. Store in refrigerator for 5 hours or until panna cotta has set.
  8. Top each panna cotta with passion fruit seeds.
  9. Devour!

    1. Ugh that’s a bummer. Did you use the canned coconut milk? If so, next time maybe add 2 teaspoons of gelatin instead of the 1.5 tsp it calls for.

    Like you, I always strayed away from the exotic fruits because I didn’t know how to break into them. Now that I know passion fruit is so easy, we’re definitely gonna be giving it a go along with this panna cotta! SO delicious!
