Mini Pancetta Goat Cheese Frittatas

Mini Pancetta Goat Cheese Frittatas

As we come closer and closer to Christmas Day I am getting more and more excited! One, because everyone is coming here for Christmas. And two, because its Christmas! Christmas movies, Christmas cookies, Candle Light service, O Holy Night, Christmas Trees, Presents, Family Time, and Christmas Day Breakfast in your pjs. Best Holiday ever!

I can remember going to bed early Christmas Eve Night so excited I could barely sleep, wondering what kind of presents I would have waiting for me in the morning. It was the best feeling to wake up to breakfast smelling up the house and running downstairs to see all of the loot waiting for us by the fireplace! One year I can remember getting a stereo system!! My brother and I would play the whole morning and into the night with the new toys. So fun!

What kind of traditions does your family have Christmas Day?

One the things I want to continue to do as Mike and I grow our family is have Christmas Day Breakfast. One of Mike’s favorite breakfasts is Frittata, or as he calls it “Breakfast Pizza”. I’ve actually made a couple of these because he’s loved them so much. {Turkey Bacon & Spinach Frittata, Mushroom & Cheese Frittata, and Sausage, Pepper, and Onion Frittata}

This time, since there will be so many people at Christmas Breakfast I made Mini Frittatas using muffin tins. They came out perfect! The flavors from the goat cheese, salted pancetta, sun-dried tomatoes, and sweet green onions was amazing. I can’t wait to make these for my family!

How to Make The Best Mini Frittatas

To get started, preheat oven to 350º. Heat a large saute pan over medium high heat, add 4 oz. of cubed pancetta. {i bought it pre-cubed}. Saute for 5-7 minutes or until pancetta is browned.

In a large bowl, whisk 12 eggs with 1/2 cup of 2% milk. Set aside.

Spray muffins tins with PAM to make sure frittatas do not stick. Then evenly distribute browned pancetta, 3 chopped green onions, and 1/3 cup of diced sundried tomatoes between 12 muffin cups.

Next, pour in egg mixture so all muffins cups are even.

Lastly, evenly distribute 4 oz. of crumbled goat cheese on top.  Bake for 17 minutes, remove and let cool for 5 minutes.

Ingredients
