Mango Couscous Salad

I’m so excited about today’s post because today’s recipe has a photo of a piece of pottery I purchased in Ecuador. Well, actually there are two pieces from Ecuador but one that has a really cool story! 

If you followed along on Instagram, you might remember me talking about our trip to the Nate Saint house in Shell, Ecuador. If not, let me give you a little refresher!

In 1956, four missionaries took a flight from Shell, Ecuador to a Wauroni Village deep in the Amazon Jungle. Nate Saint was the pilot of these flights and had a heart for helping the tribes in the jungle. These missionaries had been communicating with this indigenous tribe through various methods of delivering items/gifts to the men and then at times landing and trying to communicate with them in person. Things were going great and a bond had formed! The Wauroni were even making items for the missionaries to take back.

But on January 8, 1956 things changed. The men took the flight out to see their Wauroni friends only to be greeted by a large warrior group of 10 men who killed all the missionaries and Nate Saint. Since then that Wauroni tribe has come to know Jesus!

When we flew into the village it was so cool. We actually got to meet the last remaining member of  the group of men who speared the missionaries. He is a strong caring man who serves his tribe and tells them about Jesus constantly, he has for sure made a huge impact on the legacy of that tribe!

So why do I tell you all that?

Well, we got to visit Nate Saint’s house. His base of operation and flew out of the same airport he flew out of so many years ago. In his house, there were pictures, news articles, the two way radio they used to communicate AND a bunch of handmade items for sale that the Indian tribes made. The money goes directly to the tribe to give them money to purchase things with.

I bought a couple of things there but my favorite is the black and white bowl with the dry couscous in it featured above. (I think it’s the second picture from the top) This bowl was made by hand and then intricately painted with … wait for it.

Her daughters HAIR!

Yup! She makes absolutely BEAUTIFUL pottery, all the pieces to make the pottery are found along the bank of the river. Then she hand paints every single piece with a brush that is made from her daughters hair. I was completely blown away! I actually bought two of them, the other one is more intricate than this one is. It is truly incredible!

The other piece, the blue and yellow one I got at a local Ceramic store in Cuenca, not as exciting but equally beautiful.

Ok, now on to the actual recipe, this Mango Couscous Salad.

This recipe is crazy easy to make and super light to eat. The Mango and the Couscous are the stars of this dish with a little support by red onion, fresh cilantro, and a very light vinaigrette. I served this salad with the Salmon and Avocado Salsa I posted on Friday and it went perfect together. But it would also be great served along side grilled chicken or a flaky white fish.

Description

This easy Mango Couscous Salad is packed with sweet mango and a light dressing. This salad is a quick, 15-minute side dish your family will love, and it goes perfectly with seafood or chicken!


Ingredients

Scale
  • 1 cup pearl couscous
  • 1 1/2 cup water
  • 1 cup fresh diced mango
  • 1/4 cup fresh diced cilantro
  • 1/4 cup diced red onion
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1 teaspoon honey
  • salt to taste

Instructions

  1. Pour water into a medium saucepan. Bring to a boil.
  2. Once water is boiling, remove from heat. Stir in the pear couscous, cover and let side for 10 minutes.
  3. Once 10 minutes is up, fluff the couscous with a fork.
  4. In a small bowl, add olive oil, red wine vinegar, ground cumin, garlic powder, honey, salt, and pepper. Stir until combined.
  5. Add the couscous to a bowl with mango, cilantro, red onion, and vinaigrette.
  6. Gently toss with a wooden spoon to incorporate all the ingredients. Serve.

  1. Easy and good, but too sweet for me. Next time I will omit the honey. Also I used Trader Joe’s Israeli cous cous that needs different cooking instructions than the recipe calls for.

    That is so crazy that she used her daughter’s hair to paint the bowl! I’ve heard the stories about the missionaries before and I think it’s absolutely amazing that you got to meet the last tribe member who was involved as well as witness what those missionaries gave their lives to accomplish. Praise God!

    I’m amazed you were able to meet the last remaining member … and to see how God has changed his life and ultimately his tribe’s. Incredible. Bet that’s an experience you will never forget!

    1. OH my gosh Megan is was seriously so cool! And when we got off the plane to greet them, he was the first one to walk up and prayed for the pilots. Apparently he prays for every pilot that flies in and HAS since that one day! 🙂 So cool!
