Lamb Endive with Cherry Balsamic Sauce

This Lamb Endive with Cherry Balsamic Sauce features ground lamb sauteed with fresh spinach atop a petite Endive cup. It’s then topped with crumbled goat cheese and a sweet & salty cherry balsamic sauce!



Ground Lamb Filling:

  • 2 tablespoons of olive oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 2 teaspoons of fresh thyme, chopped
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 5 oz. fresh spinach
  • 1 lb. ground lamb

Cherry Balsamic Sauce:

  • 1 cup of cherry pie filling
  • 2 1/2 teaspoons of balsamic vinegar
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of pepper


  • 4 oz. of goat cheese
  • 2 bunch of endives


  1. Put cherry pie filling, balsamic vinegar, salt, and pepper in a small saucepan. Bring to a boil, then reduce to simmer for 10 minutes, stirring occasionally.
  2. Put sauce in a blender and blend until smooth. Set aside.
  3. In the meantime, heat a large saute pan to medium high heat. Add olive oil and diced onion. Saute until translucent, approximately 5 minutes.
  4. Next, add minced garlic clove, chopped fresh thyme, salt, and pepper. Saute for 30 seconds.
  5. Add ground lamb. Saute until there is no more pink and lamb is cooked. {approximately 5-7 minutes}
  6. Add fresh spinach to lamb mixture. Stirring for 2-3 minutes until spinach wilts.
  7. Serve ground lamb mixture on endive cups with crumbled goat cheese and a drizzle of the cherry balsamic sauce.
