Ok, so I don’t know if you caught it, but last month I totally forgot about Real Men Cook day. A day that is dedicated to our men and to help them learn how to cook. {if they don’t know already}

My husband is a big breakfast fan. He starts his mornings very early to try and beat traffic.  So he doesn’t always have time to make something extravagant, and I like my bed to much to get out. {just being honest}  Well, I have made him his favorite Delicious Coffee Cake, but that’s a night before kinda thing. 🙂

Normally, he will grab a bowl of cereal and head out. Quick, easy, and satisfying. His cereal of choice is granola. Nowadays you can get some pretty decent granola in the organic section but I wanted to experiment and see how it would turn out if I made it at home.

This Almond Vanilla Granola made the house smell heavenly while it was baking. So if anything you can use it to make your house smell better. But I would recommend eating it! hehe. It was super easy to make and had delightful hints of cinnamon, nutmeg, and vanilla. Best of all, my husband loved it. I see lots of homemade granola recipes in my future and hopefully yours! 🙂

To get started, preheat over to 325º.  In a large bowl, toss 2 cups old fashioned oats, 1/2 cup of sliced almonds, 2 Tablespoons of brown sugar, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, and 1/4 teaspoon of salt. Set aside.

In a small bowl, mix the wet ingredients, 4 tablespoons of melted coconut oil {or butter}, 1/2 cup of pure maple syrup, and 1 1/2 teaspoon of vanilla extract. Whisk until combined.

Pour wet mixture over dry mixture and toss to coat everything.

On a baking sheet, place either a silicon baking mat or parchment paper and then spread granola mixture out across entire pan. Bake for 30-40 minutes or until granola is slightly browned. {I did 35 and it was perfect} You will want to turn the granola every 10 minutes so it doesn’t burn. 🙂

Ingredients
