Healthy No Bake Almond Joy Bars

These bars were created because I was desperate to have something sweet, but didn’t want dairy or gluten in it. I also wanted to eat it STAT. There’s nothing worse than craving something sweet and having to wait forever to eat it.

Hence these No Bake Almond Joy Bars.

The bars can be made in less than 5 minutes so they definitely satisfy that sweet tooth in a hurry.

Now, if you want them at their “prime.” I like to let them harden up a bit by placing them in the refrigerator. This allows the coconut oil and chocolate to set instead of melting in your hand, so you get the full “bar effect.”

The Keys to Making Amazing Vegan Almond Joy Bars:

  1. Spray your loaf pan with cooking spray. (use either canola or coconut) This will ensure you can get those bars out easily.
  2. Make sure the coconut oil and almond butter are melted when you start to make the filling.
  3. Let the bars cool in the refrigerator before serving.
  4. Store in the refrigerator. The coconut oil tends to melt when stored at room temperature which leads to mushy bars, so keep the bars stored in the refrigerator until right before serving!

Honestly, I didn’t know how good these bars would be until I tested the filling.

The combo of the coconut flakes, almond slices, almond butter, almond flour and cinnamon is irresistible. Every bite of these bars screams coconut and almond! They are slightly sweet with a nice texture to them from the coconut. Topped with dark chocolate and yeah, they’re incredible!

Literally Mike, Cason and I have had a fight for these the past two times I made them.

Description

These No Bake Almond Joy Bars are a healthy dessert filled with coconut and almond butter then topped with chocolate for the ultimate bite. An easy vegan bars recipe that is sure to satisfy your sweet tooth!


Ingredients

Scale
  • 1 cup shredded coconut (unsweetened)
  • 1/3 cup almond meal (almond flour)
  • 1/4 cup coconut oil
  • 1/3 cup almond butter
  • 1/4 cup honey (or maple syrup if you want vegan)
  • 1/4 cup raw sliced almonds
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Chocolate Drizzle:

  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Spray a loaf pan with coconut oil, set aside.
  2. Add coconut oil and almond butter to a medium bowl. Put in the microwave and melt. (about 30 seconds – 1 minute). Stir together until smooth.
  3. Add honey and vanilla, continue to stir until combined.
  4. Using a spatula, mix in shredded coconut, almond meal (almond flour) and sliced almonds. Mix until combined and the mixture forms a ball.
  5. Pour mixture into prepared loaf pan. Spread out evenly. Set aside.
  6. For the chocolate drizzle. To a small bowl add dark chocolate chips and 1 tablespoon of coconut oil. Put in microwave and melt in 30 second increments. (should just take two times) Stir with a spoon so mixture is smooth and liquidy.
  7. Pour the chocolate drizzle over the coconut almond mixture. Spread evenly.
  8. Optional: top with chopped raw almonds or toasted coconut.
  9. Place in refrigerator until the topping is set. Serve.

    YUM, oh my goodness. I would eat these bars every day, ALL DAY. I feel ya on wanting sweet stuff STAT too. Whenever something pops up like that, I always reach for dates! They’re delicious!
