Grilled Tilapia Bowls with Chipotle Avocado Crema

These gluten-free Grilled Tilapia Bowls with Chipotle Avocado Crema combine all your favorite Mexican flavors. Quinoa, beans, corn, tomatoes and grilled tilapia are drizzled with the creamiest chipotle avocado topping!

A couple months ago I posted this Grilled Tilapia Bowl over at Love Grows Wild. It was so good I just had to share it here too! You’re welcome!

On Sundays after church one of Mike and I’s favorite places to go to is Chipotle the Restaurant.

We usually choose the burrito bowl which is basically a burrito but without the tortilla. You can pack your burrito bowl with whatever you want and the size is perfect for Mike and I to split.

Why I Love These Grilled Tilapia Bowls

My goal with this Grilled Tilapia Bowl was to replicate the bowls we normally get at Chipotle except with a few slight twists.

Twist #1 was I used fish. In order to give it that Tex-Mex flavor I put on some cajan seasoning and that grilled them up!

Twist #2, I created this amazing Avocado Chipotle Crema to put on top of it. (on a side note if you don’t have a lime squeezer yet, get one, it’s life change and you get way more juice out of the lime!)

And guys… let me tell you…this sauce is seriously da bomb.com!

I would eat it on everything if I could.

But since clearly I can’t eat it on EVERYTHING …. I will load it all over this healthy 30 minute Blackened Tilapia Bowl and be one happy camper! Believe me, once you get a bite of this dish you will too!

Grilled Tilapia Bowls with Chipotle Avocado Crema

Description

These gluten-free Grilled Tilapia Bowls with Chipotle Avocado Crema combine all your favorite Mexican flavors. Quinoa, beans, corn, tomatoes and grilled tilapia are drizzled with the creamiest chipotle avocado topping!


Ingredients

Scale

Tilapia Seasoning

  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 large tilapia filets

Chipotle Avocado Crema

  • ½ cup plain Greek yogurt
  • juice of one lime
  • 1 large avocado
  • 1 garlic clove
  • 1 chipotle pepper {from a can of chipotle peppers in adobo sauce}
  • salt & pepper

Other Ingredients

  • 3 cups cooked quinoa
  • 15 oz. black beans, rinsed and drained
  • 2 ears fresh corn, shucked
  • ¼ cup fresh cilantro
  • 1 roma tomato, diced

Instructions

  1. In a food processor, add plain yogurt, juice of 1 lime, avocado, garlic clove, chipotle pepper, salt and pepper. Blend until smooth. Place in refrigerator.
  2. In a small bowl, add chili powder, paprika, cumin, garlic powder, salt, and pepper. Mix together.
  3. Rinse and pat dry tilapia filets and season both sides of the fish with the seasoning just made. {you may have some left over and that’s fine}
  4. Heat grill to medium high, grill the two ears of corn for 3-4 minutes per side.
  5. Next, grill tilapia for 3-5 minutes on the first side and 2-3 on the second.
  6. Remove both from the grill and set aside.
  7. Assemble your bowls, place ¾ cup of cooked quinoa in a bowl, then add in black beans, diced tomato, fresh grilled corn {that has been cut off the cob}, cilantro, tilapia, and then top with Chipotle Avocado Crema.

    1. Yes, the avocado crema can be made in advance. If stored in an air-tight container and refrigerated it can last for up to 2 days.

  6. This sounds AMAZING! I would love to cook this for dinner tonight since I have all ingredients on hand but unfortunetly our grill broke last week. Do you have any other recommendations on how to cook the tilapia and corn? Maybe skillet or bake??? I’m not to sure. Man this sounds soooo good!

    1. Oh you could totally use a skillet for the fish and then a microwave for the corn. (I usually just wrap the corn up in a wet paper towel and cook it for 2-3 minutes and its perfect. 🙂 Hope you love it!

  7. This was delicious! I used israeli couscous because I’m not a big fan of quinoa, but oh my goodness! This is going into our rotation. The hubs and I loved it so much last night, that we are going to have it again tonight!






  8. My hubby who is on a weight reduction diet and I loved this. I also sprinkled some capers atop and put other ingredients on a bed of spinach and lettuce to be a little more filling for a man. Loved this crema and the greek yogurt skinnied the avocado up a little so one can use a little bit more. The lime in this dish is da bomb. a keeper, perfect light lunch

  9. My family loved the Crema ! I only had a blender to make it in but it still came out great . I just used a can of corn. I also used the broiler on my stove instead of the grill. I highly recommend this dish especially if you are looking for a healthy dinner idea.






    1. Hmmm danielle… maybe add more lime juice too it and less chipotle so the avocados keep and don’t turn as it sits.

  11. I made this for my husband last week and the first bite his eyes got real big. All he could do is mumble yummy sounds as he kept stuffing his mouth. His favorite part was the creme. He loved it. I am making it again tonight cause he keeps asking when he is going to taste heaven in his mouth again. Lol.

  12. Do you have a recommendation for a sauce to use besides this one? It looks great but I don’t have a food processor unfortunately. Thanks!

    1. Laura, you could still totally make this without a food processor. Just make sure the avocados are soft and then mush everything together with a fork, almost like you would for guacamole. It will be a little chunkier than if you were to use a food processor but still have the same great taste. Believe me… you WANT this sauce girl. 🙂

  13. So I made this for dinner tonight and even with some adjustments it was awesome! First I used Cod instead of Tilapia since I prefer a milder fish, and I added some romaine lettuce and used less quinoa to make it more like a salad. I didn’t have adobo chiles but I did have dried chipolte pepper so I used that in the chipolte avacado crema and I could drink it!!! This is a delicious healthy meal, thanks for sharing.






    1. Love the cod substitute, I think I might try that or mahi mahi next for more of a thicker fish to grill! Good thinking on using the dried adobe peppers to make the sauce happen, because this sauce is the star of the show for sure!     The best thing I ate over the 4th of July weekend was definitely my brothers SUPER-juicy hamburgers. Holy Yum! And these bowls? Ditto. Absolutely GORGEOUS, Krista! I wanna put that good-lookin’ avocado crema on everything!
