Happy Friday ya’ll! Today is not just any friday, it is the last friday of the month. Which means we are headed into March! Craziness!!
Today is also Mystery Dish Day!! Hip Hip Hurray!
This month for Mystery Dish, the host was Christine over at I Dig Pinterest. If you haven’t checked her out yet, you need to head over there now! {well, check out the recipe first then head over there. :)} The ingredients she challenged us with were:
- Fresh Mushrooms
- Pork
- Spinach
- Cream Cheese
- Pineapple
- Butterscotch Chips
- Macadamia Nuts
- Sriracha Hot Chili Sauce
- Ritz Crackers
- Tortillas
My first initial thought when I got these ingredients was to go with my very favorite omelet, a Spinach Mushroom Omelet with Cream Cheese and Tomatoes. While it is seriously amazing, I had made it before so thats no fun and definitely not challenging.
Mystery Dish is all about a challenge! So I decided to stick with the dessert recipes theme I had from last month {Strawberry Orange Ice Cream with Chocolate Chips} and make another healthy dessert!
One word.. Nutella.
Done. Go make it! Now!
No really, Nutella melting over grilledsweet fresh pineapple and topped with toasted macadamia nuts. Absolutely amazing and count em’ 3 ingredients!

This dessert comes together in less than 15 minutes and is to die for. My husband is already requesting a repeat order of this and I am more than happy to oblige because it was that good. You really don’t even feel bad eating it either because its fruit for dessert. 🙂 Win!!!
How to Make Grilled Pineapple with Nutella & Macadamia Nuts
To get started, Cut off the skin of the pineapple trying to save as much pineapple as possible.
Keeping the pineapple whole, use a corer and remove the core from the center of the pineapple. Next slice pineaple into 1″ thick slices.
Heat grill to medium high heat and grill each slice for 2-3 minutes per side.
Remove from grill and set aside. Toast 1/2 cup of macadmia nuts in a saute pan over medium high heat for 3-5 minutes. In the meantime, put 1 tablespoon of Nutella on each pineapple slice.
You can serve pineapple slices individually or stacked on top of each other {like a cake}. Top the pineapple with 1 tablespoon of toasted macadmia nuts

- Nutella
- 1/2 cup of macadmin nuts, toasted
Instructions

This looks amazing! I love grilled pineapple but would have never thought to put nutella on it an serve it as a dessert. Pretty darn healthy for a dessert and Nutella is my husband’s absolute favorite, so he would be all over this!
