Easy And Healthy Grill Recipes

Last week on Facebook I took a poll to see what kind of recipes you would like to see next on JHE. The response was an overwhelming…. MORE GRILL RECIPES. But one of the comments caught my eye… mostly because I hadn’t done it before. My friend Gloria, who blogs over at Simply Gloria, was wanting a recipe that involved Grilled Tomatillos.

What Is A Tomatillo?

Have you ever had tomatillos before?

They are absolutely delicious! Tomatillos are .. you guessed it, part of the tomato family. 🙂 They are green in color and have a light papery shell on the outside… almost like a present just waiting to be opened! They are somewhat tart but can also have a slight sweet flavor.

When Gloria threw down the challenge of grilled tomatillos I was trying to think of how I could use them, immediately what came to mind was a Mexican or Tex-Mex sauce of some sort. I mean tomatillos are used all the time in Mexican salsas so I know the flavors go well together.

Then I thought, while we’re at it why not roast some poblanos on the grill and grill a little chicken for the sauce to go over.

I seriously love it when a recipe comes together. This is one of those times where I wasn’t quite sure how it was going to turn out. It could be an absolute failure and I end up throwing the entire dish out {which has happened before} or a major success.

Thankfully it was the later!

Easy Tomatillo Sauce Recipe

And boy was it a success! I just starting throwing ingredients in that I thought would work, turned on the blender {prayed}, and then stuck my finger in. {after the blender has stopped of course :)}

Guys… this sauce! Holy Moly!

Its not overpoweringly spicy, has a slight tartness from the yogurt and tomatillos, then a subtle grill flavor to finish it all up.

Best of all this dish is perfect for our Real Men Cook Recipe of the month, which is a way to help get those men in our lives to cook up one delicious meal! It has tons of flavors that a man wants in his food, non of this “foo foo” stuff. Just pure bold flavors! Plus what man doesn’t like something grilled? Um… no one!

I love it when recipes really come together too. Such a great reward for the hard (but fun) work! I adore any tomatillo based sauce and this one looks really unique- and delicious. Thanks for sharing!

  2. My husband called this “The sauce of God”. Touche, really is one of the best sauces that we’ve made and it really just compliments chicken and rice so well.

Krista this looks soooo good! And your FB fans know where it’s at. Bring on the grillz. That is all I want to eat. We had grilled chicken tonight for dinner (again) and I’m just sorry there was no tomatillo sauce to go with it! Holy yum!! PS is that pineapple in your rice? holla.

    1. Um.. heck yes it is pineapple!!

Don’t blame ya on the grilled chicken front girl.. its deliciouso! But this sauce totally puts it over the edge!

      1. Hi, this looks so delicious!! I was wondering if you had the rice recipe for us also. I couldn’t find it on your site. Thanks!!

        1. Nope, I haven’t posted it yet Jackie. But all I basically did is make 4 servings of rice (whatever that calls for on the back of a box) then add some paprika, freshly chopped pineapple, and green onions. 🙂 Hope that helps girl!

YUM Krista! I could totally just eat that sauce by the spoonful! All of those ingredients sound amazing together. I love to to grill up some chicken, and this sounds like the perfect way to top it off. 🙂

    1. Oh Pat you need to! They are awesome! I actually prefer green salsa over red salsa most times because of flavor. This is a great way to try it out and see if you like them. 🙂
