Grilled Chicken, Sausage, Pepper & Onion Kabobs

I wish every recipe I made came to me from divine appointment or intervention. 

Well, let me put your mind at ease…that doesn’t happen. {even though I wish it did, it would make my life alot easier}

This recipe in particular came to me as I was pushing the awesome red mustang car cart through the grocery store {for those of you who don’t know what a “mustang car cart” is, those are the huge honky carts that have a car attached to make sure your kid does not scream the entire time you are in the grocery store}.

I was passing the meat section and happened to glance over and saw these Poblano & Queso Chicken Sausages. First thought that came to mind was … YUM!… and they were on sale… WIN! So I grabbed them.

I wasn’t quite sure what to make, so my go-to technique when in doubt or just have a major cooking “brain toot” {sorry the word fart just grosses me out} is “throw it on the grill”. Everything tastes better on the grill, especially sausage! In order to get my veggies into this dish I sandwiches these delicious chicken sausages in between bell peppers and red onion thereby making what us “foodie” people call a kabob! 🙂

Kabobs are probably one of my favorite things to make on the grill because they are super easy, a great way to get rid of extra vegetables and/or fruit, usually pretty healthy for you, and they always come out tasting amazing. These Grilled Chicken Sausage Kabobs were no exception, and they come together in less than 30 minutes!

How to Make These Easy Grilled Chicken Kabobs

To get started, soak 10 wood skewers in water for 20 minutes. {this ensures that the skewers will not burn on the grill}

Next, cut up 2 red pepper into 1″ cubes, 2 yellow peppers into 1″. Cut one large red onion in half and then into cubes.

Lastly, cut 5 chicken sausage {any flavor} into 2″ sections, basically each sausage link will be cut into 3’s. 🙂

Assemble the kabobs, alternate the sausage with onions and peppers. Heat grill to medium high heat and place kabob on grill. Grill each side for 4-5 minutes.

Remove from grill. Serve with Roasted Garlic & Herb Couscous.

  • 2 red peppers, cut into 1” cubes
  • 2 yellow bell peppers, cut into 1” cubes
  • 1 large red onion, halved then cubed
  • 5 chicken sausages, {any flavor} cut into 2” links

    I am so making these kebabs when we roll out the grill, they look fantastic!
    Bad part about living in an apartment on a second floor, have to keep out huge grill in the garage 🙁

      Oh… that is so not fun. My brother had the same problem when he was living in an apartment, all he did was grill in the summer but it took up his entire patio during the winter. The sacrifices we make to have good grilled food. 🙂

      These chicken sausages in particular not, they are the HEB handmade brand. But I know that there are others out there that are!
