Grilled Chicken Margherita Pizza

This Grilled Chicken Margherita Pizza is a delicious personal pizza with smokey grilled chicken, roasted cherry tomatoes, melty cheese and fresh basil. It’s the ultimate margherita pizza recipe!

Grilled Chicken Margherita Pizza

Sometimes a girl just needs to have a pizza, ya know!

For whatever reason, probably because I am about to go to Miami and my body says… “oh now would be a good time to crave fatty bo batty foods”… I have been craving pizza.

Pizza from anywhere really, just as long as it has dough cooked to perfection and then covered in cheese I’ll be good!

Do you ever have those cravings?

Every once in a while I will get them, usually I’m ok with pushing them off. Out of site out of mind. But this pizza craving has been pushed off long enough. It was time to make my own and face plant hardcore in all the deliciousness that is this Grilled Chicken Margherita pizza!

Usually I will make my own whole wheat pizza dough, but I have been loving 1.) not making the dough and 2.) whole wheat naan.

If not, get in your car and go to the store now. It is life changing! For reals! I could probably just sit and eat this stuff with hummus all day long.

In todays recipe though, the whole wheat naan is our pizza dough.

One of my favorite ways to eat pizza is Margherita style… aka… no sauce just olive oil, garlic, tomatoes, cheese, and basil. It lets the pizza shine instead of just tasting tomato sauce.

Which, by the way, makes this recipe ridiculously easy because all you have to do is prep the chicken and tomatoes and your good to go. Oh, remember the other day where I said I was obsessed with roasted tomatoes… yeah.. here is another recipe with them in it… told you! 🙂

Description

This Grilled Chicken Margherita Pizza is a delicious personal pizza with smokey grilled chicken, roasted cherry tomatoes, melty cheese and fresh basil. It’s the ultimate margherita pizza recipe!


Ingredients

Scale

Grilled Chicken:

  • 1 large boneless chicken breast
  • salt & pepper

Roasted Cherry Tomatoes:

  • 1 pint of cherry tomatoes
  • 1 teaspoon of olive oil
  • salt & pepper

Remaining Ingredients:

  • 2 whole wheat naan flatbreads
  • 2 tablespoons of olive oil, {1 per naan}
  • 1 garlic clove, minced
  • 1 cup of mozzarella cheese
  • 1/2 cup of fresh basil, chopped

Instructions

  1. Preheat oven to 400.
  2. Place 1 pint of cherry tomatoes on a baking sheet, season with 1 teaspoon of olive, salt, and pepper.
  3. Roast for 20 minutes.
  4. In the meantime, season 1 large boneless chicken breast with salt & pepper.
  5. Place on a medium high grill and grill each side for 5-7 minutes {or until no more pick}
  6. Remove from grill and let rest, slice into thin pieces once chicken has cooled enough to touch.
  7. Preheat oven to 350.
  8. Place 2 whole wheat naan flatbreads on a baking sheet.
  9. Evenly spread the following between the two naan flatbreads, 2 tablespoons of olive oil, 1 minced garlic clove, 1 cup of mozzarella cheese, sliced chicken breast, and roasted cherry tomatoes.
  10. Bake pizzas for 8-10 minutes, until cheese is melted.
  11. Remove from oven and sprinkle 1/2 cup of fresh chopped basil between the two pizzas.
  12. Serve!

    1. Awesome! So glad to hear it Rachel, its definitely one of my favorites. 🙂

      You could precook it for 5-7 minutes so that it is somewhat crispy, take it out then put the toppings on it and put it back in for the recommended cook time in the directions.

  4. This looks amazing, but I’m not sure I would refer to it as healthy. It comes in at over 800 calories a serving. 🙁

    1. Hey Nicole! 🙂 Hmm… not sure where you ran it but the app I use for all my recipes has it at 651 calories per serving and thats if you eat the whole naan, if you choose it eat half then it will be 328.5. Hope that helps!

  17. I love using naan flatbreads for pizza, and this one looks out of this world! Yep, I get those cravings, and when I do there’s no denying it. This pizza would completely satisfy me!
