Happy Monday!

Now … I know, normally the start of the week … aka Monday might not always be the most exciting and invigorating day. After all, the relaxation and joy of the weekend is over and Monday means “back to life, back to reality.” Morning traffic, stressful work deadlines, evening traffic, go to bed and then do it all over again… for four more days! Bahumbug!

Description

These crispy Garlic Parmesan Zucchini Chips are an amazing appetizer. They’re so much healthier and even more addicting than potato chips!


Ingredients

Scale
  • 2 zucchini, 1/2″ slices
  • 2 yellow squash, 1/2″ slices
  • 1/2 cup fresh grated parmesan
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Preheat oven to 375.
  2. In a bowl add zucchini, squash, parmesan, olive oil, garlic powder, salt, and pepper. Toss with your hands to completely coat.
  3. Place zucchini and squash on a baking sheet in a single layer.
  4. Bake for 15-20 minutes until cheese is slightly browned.
  5. Serve.
