Farro Arugula Strawberry Chicken Salad Recipe

A super simple salad to throw together for lunch or dinner that’s friendly on the waistline!

A couple weeks ago, hubbie and I went on a date to one of our favorite spots. It’s called Local Pour. They serve all local beers from Texas on tap and even have some wine on tap as well. It’s just fun for us to try different stuff. Lately we’ve been getting into trying more of the local flavors and it’s amazing! Texas ya’ll … we make some good beer and wine!

So, anyways, the most recent time we went to Local Pour I tried Southern Stars – Bombshell Blonde – it’s a pale ale … that’s more my jam. I’m not really a Stout kinda girl. But this beer ya’ll .. it was delicious. So smooth and didn’t have that hoppy bite most beers have. I’m officially addicted.

Not only does this place have a variety of bar drinks but the food is incredible! They are super creative with their menu and I don’t think I’ve ever had a dish I didn’t like there.

It has been cold here lately, as in it’s been like 40s!!! Which is cold for us! So I ordered their Famous Chili (which I hadn’t had before), it was served with a slice of Roasted Jalapeno Cornbread. There are times I wish I could insert an emoji face in my posts, now is that time. I would put the one with the big eyes and hands next to the face … this Chili was Phenomenal! And it actually paired perfectly with that Bombshell Blonde Beer. Note to self.

In my mind, you can’t order just soup! Oh no. You need to order soup and salad, that rounds the dinner out a little more.

So I ordered another new thing.

Man I was on a role that night! All three things were new! 🙂

It was this Farro Arugula Salad that had Spanish Marcona Almonds, Goat Cheese, and fresh pickled Cherries. I was in love. I went from one good thing to the other with my fork and cup, never taking too much time in one spot!

So right there and then I knew I needed to try and replicate something. And lucky for you, I chose the Farro Chicken Salad.

This Farro Arugula Strawberry Chicken Salad has so many flavors going on, your gonna keep eating just to see what else you can find.

And even though I tried to get most of the ingredients in the title, I did miss a few. Namely, the best one .. GOAT CHEESE! The Goat Cheese is the single ingredient that binds this dish all together and makes it down right glorious to eat! But then you top it with my famous Balsamic Vinaigrette and … in the words of Joey from Friends. “Forget about it.”

This Salad is just one more recipe for you to add to your list of yummy recipes to make! And can I tell you a secret? I even took a shortcut, cuz I love you! I used Rotisserie Chicken, so all you have to do is tear it off, throw it in the bowl and viola!

Ingredients

Scale
  • 1/2 cup farro (uncooked)
  • 1 1/2 cup of water
  • 1 whole rotisserie chicken, white meat removed and roughly chopped
  • 6 cups arugula
  • 1 cup strawberries, quartered
  • 3 oz. goat cheese, crumbled
  • 1/3 cup sliced almonds
  • 1/4 cup red onion slices

Balsamic Vinaigrette:

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon ground mustard
  • 1 tablespoon honey
  • 1/2 teaspoon dry basil
  • salt & pepper to taste

Instructions

  1. Add farro and water to a medium size pot. Cover. Bring to a boil. Reduce heat and let simmer for 30 minutes. When the farro is done, drain and remaining water. Set farro aside.
  2. In a small bowl, add balsamic vinegar, olive oil, ground mustard, honey, dry basil, salt, and pepper. Whisk until combined or when the vinegar and oil no longer separate.
  3. To a large salad bowl add arugula, cooked farro, rotisserie chicken, strawberries, goat cheese, red onion, and almonds. Drizzle with dressing, lightly toss to coat everything with dressing.

    This salad looks SO good! Although, I think I would swap the goat cheese for feta. I know, blasphemy- but I don’t like goat cheese, lol. 😉
