Decadent ESPRESSO CASHEW CLUSTERS using just 4 simple ingredients! These clusters are filled with caramel and covered with an espresso flavored dark chocolate! A holiday treat you’ll want to eat all year round! 

Are they decorating for Christmas by your house?

In the area of town we live, the city puts up Christmas decorations all over. Garlands on the poles, wreaths that light up, decorated fake Christmas trees. Basically the works. By us, they have been doing this for about 2 weeks now. They probably started right after the last candy of Halloween was handed out!

Last night they had the annual Christmas tree lighting, in a place called Market Street. It’s a big festivity for the kids. They have a band that plays Christmas music, elves that are on stilts handing out candy canes, hot chocolate, apple cider, fake snow … all culminating in the lighting of a 40 foot Christmas tree that has lights synchronized to the tune of certain songs.

After the tree is commissioned it will continue to play it’s light show to the tune of music every 30 minutes until Christmas.

So …. I love Christmas and all. We even went to the tree lighting last night. But ya’ll, it is not even Thanksgiving yet?! I feel like every year they move the Christmas festivities up another week. Pretty soon we’ll be starting Christmas in September!

I figured since Christmas stuff is already going down. Why not start with the Christmas treats?

Seems reasonable right? You like chocolate right?

How about I start out slow. No glittery Christmas trees, just C H O C O L A T E  and C A R A M E L. One of my favorite combinations … it takes a close second behind Chocolate and Mint. 🙂 (that’s coming next week)

These ESPRESSO CASHEW CLUSTERS are one of the easiest treats you’ll make all year. Just 4 simple ingredients, no baking, and finished in 20 minutes!

All you do is form little piles of cashews, melt down some caramel, top each pile of cashews with a dollop of caramel and then dunk those clusters in melted dark chocolate filled with fresh ground espresso! I topped mine with sea salt for an extra punch!

Ya’ll I guarantee you will swoon of these bad boys!

It’s a great Christmas treat even the kids can help with … or in my case my mom and Cason! 🙂

I will warn you though. These will be devoured in minutes. So … if you’re like me and addicted to dessert, you might want to hide a few to munch on late at night.

Description

These clusters are filled with gooey caramel and covered with a rich espresso-flavored dark chocolate! 


Ingredients

Scale
  • 1 cup of whole cashews
  • 8 oz. soft chewy caramels
  • 14 oz. dark melting chocolate wafers
  • 1 1/2 tablespoon ground espresso
  • sea salt to garnish

Instructions

  1. Place parchment paper on a baking sheet.
  2. Form 20 stacks with of 5-7 cashews in each, piled up.
  3. Unwrap caramels and place in a microwave safe bowl. Place in microwave and melt in 30 second increments until melted and smooth. Stirring the entire time.
  4. Once the caramel is smooth. Add a scoop of caramel to each pile of cashews. Try to make sure that the caramel touches each of the cashews in the pile so it holds together.
  5. When finished with the caramel, put them in the refrigerator for 5-10 minutes so the caramel hardens.
  6. Add melting wafers to a medium sized microwave safe bowl. Melt chocolate in 30 seconds increments, stirring throughout. Once the chocolate is melted, add espresso to the chocolate and stir to combine.
  7. Add the cashew clusters to the bowl of chocolate and completely coat. (I used two spoons to do this).
  8. Place chocolate covered clusters back on parchment paper lined baking sheet.
  9. {Optional} sprinkle with sea salt
  10. Place in refrigerator to harden up.
  11. Devour!
