Delicious Coffee Cake
Alright… we have officially changed the name from “Helping Hubbie” to “Real Men Cook.” 🙂 I think it conveys what the goal is, which is to help our “Real Men” learn how to “Cook”. {or add to what they already know} I really like it, so thank you to all of you who helped with the name change!
Todays recipe is actually really close to my husbands heart. It is a family recipe that his grandma use to make all the time and has been passed down to us! 🙂 I make it on occasion, mostly because there’s TONS of sugar. But whenever I do, people always want the recipe. {thanks grandma!}
My good friend Rachel has been asking me for a while to, “post that coffee cake recipe on the blog.” So here you go Rachel! Now, go make a warm cup of coffee or latte and start making this Delicious Coffee Cake. It is a great and easy coffee cake recipe for your man to have in his back pocket. Enjoy!
Men!! This is perfect to make for your wife on Mothers Day and prove that Real Men Cook! 🙂
How to Make Delicious Coffee Cake
To get started, preheat oven to 350º. In a stand mixer {use the whisk attachment}, add 2 1/2 cups of flour, 1 cup of packed brown sugar, 3/4 cup of white sugar, 3/4 cup of vegetable oil, 1 teaspoon of salt, and 1 teaspoon of ground nutmeg.
Mix until combined. Remove 1 1/2 cup of mixture and add to a small bowl, this is for your topping. Next add 1 cup of finely chopped pecans {I put mine in a small food processor}
and 1 teaspoon of cinnamon to small bowl. Mix all ingredients in small bowl until combined, set aside.
In the stand mixer, add 1 cup of milk, 1 egg, 1 teaspoon of baking soda, and 1 teaspoon of baking powder.
Mix at slow speed until there are no more lumps. Grease and flour a 13×9 glass pan and add cake batter.
Next, evenly spread pecan topping over batter.
Place in oven and cook for 30 minutes. {or until a toothpick comes out clean}
Serve with a nice warm cup of coffee! 🙂
