Cucumber Avocado Sandwich with Herb Goat Cheese

This heart healthy CUCUMBER AVOCADO SANDWICH slathered with an Herb Goat Cheese is the perfect lunch or quick dinner recipe. Believe me, you’re gonna be in love!

Did you ever have a Pizza Night or Taco Night growing up?

What about Movie night?

I really can’t remember having theme nights growing up. Probably because my parents were carting either me or my brother around to practice.

But I realized something. Now that I’m a mom, I really wanted to have ‘theme’ nights. Nothing consistent, you know … like a weekly Taco Night or anything like that. But if we’re feeling a fun family night. Decide on something that sounds fun, talk about it and then there’s something to look forward to all week.

We’ve had Homemade Pizza Night, Movie Night, Taco Night, Camping Night (where we set up a 6 person tent in our living room), S’mores Night, and now recently Sundae Night!

We brought back a bunch of movies from Ecuador, basically because you can buy a Blue Ray for $1. Sooo any of the recent movies we haven’t seen yet, we purchased and brought back. One of the movies we brought back was the movie “Storks.”

Since we were gone two weekends ago at the Cowboys game, I wanted to do something special with little man. My son is all about the ice cream, so movie night with Homemade Sundaes it was … featuring the movie “Storks.” I LOVE family nights. Doing something out of the blue but together as a family! We all had a blast. We loaded our bowls with lactose free ice cream, hot fudge, bananas, and strawberries! Cuddled up on the couch, yes my son still cuddles … and I LOVE IT … and watched our movie. 🙂 Yeah for fun memories!

Before we indulged on the Sundaes though, we devoured these Cucumber Avocado Sandwiches. It’s all about balance right? Veggie Sandwiches then Sundaes. hehehe

On a side note, I’ve decided big sandwiches like this are really hard to photograph. I just can’t seem to figure out how to capture all the delicious goodies loaded in this sandwich. So excuse the photos, let’s focus on the “meat” … eerr veggies.

Two on my sons favorite veggies are Avocado and Cucumber, and when he was a baby he use to eat goat cheese toasts so I figured … let’s just combine all of them into one awesome sandwich.

A handful of fresh sprouts

This Avocado Sandwich comes together in minutes. It’s loaded with Cucumber, Avocado, Sprouts and then slathered with a homemade Herb Goat Cheese that is the perfect compliment to all those veggies. NO meat needed in this sandwich, believe me, you won’t need it!

I like to toast the bread because it gives a little crunch, but if you can’t toast it. No worries, this Sandwich is still gonna be dynamite!

It’s the perfect lunch option or a quick dinner option for the family!

Description

Heart healthy Cucumber Avocado Sandwich slathered with an Herb Goat Cheese. It’s a perfect lunch or quick dinner recipe. You’re going to love it!


Ingredients

Scale
  • 8 pieces of whole wheat/12 grain bread
  • 2 avocados, sliced
  • 1 medium cucumber, sliced
  • 1 container of snow pea sprouts (or any kind of sprout you can find)

Herb Goat Cheese:

  • 4 oz. goat cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dry basil
  • 1/4 teaspoon dry oregano
  • salt to taste

Instructions

  1. In a small food processor, add goat cheese, garlic powder, smoked paprika, basil, oregano, and salt. Blend until smooth and creamy. Set aside.
  2. Toast the bread.
  3. Add 1 tablespoon of the goat cheese mixture to one slice of bread.
  4. Then add 3-5 slices of cucumber, half an avocado (sliced), and a handful of sprouts. Put the other slice of bread on top.
  5. Cut the sandwich in half and serve!

    We don’t have a regular theme night but having one now and again is really fun. I like your balance in food for the night!     I love your idea for family nights, Krista! We do movie nights and game nights on occasion at our house and the kids look forward to it all week! And this sandwich looks so yummy! I’m obsessed with goat cheese, so any way to incorporate it more is a win for me!
