A quick and easy weeknight meal, these Crock Pot Shredded Beef Sandwiches have tons of rich beef flavor and a slight kick from the Horseradish Aioli.
It’s REAL MEN COOK day and that’s right, you read the title right “Crock Pot”! I don’t do a lot of stuff in the crock pot, more so because I like the fresh quick meals. But I figured since the kiddos are back to school everyone is looking to make dinner in a snap yet keep it scrumptious. These Crock Pot Shredded Beef Sandwiches will do just that. {plus a couple of you requested crock pot meals.. soo here ya go!}
The first time I ever had these Crock Pot Sandwiches was actually at our church small group meeting. Our small group would meet together weekly and would always start off with dinner together first. It was a time for us to chill together and catch up before we got down to business with God. 🙂 Since we met every week, us ladies would rotate each week who would make and bring dinner for that week. Well, I wish I could claim that I made these Shredded Beef Sandwiches, but alas, I cannot. My friend Chelsea made them and they were absolutely incredible. There is such a deep beef flavor in the shredded beef after sitting all day in the crock pot. Then you add in the Horseradish Aioli for a slight kick with the crunchy warm bread and WHOA! Awesome sandwich. The best part about this dish is I made it last week and Mike and I were able to get 4-5 meals out of it. Now, that is a winning dish to me and the gift that keeps on giving. 🙂 I hope you like it, let me know how it turns out.
To get started, pat a 3-5lb. beef shoulder dry.
Place beef shoulder in a crock pot and spread 1 package of McCormicks Pot Roast seasoning onto of it.
Pour 1 cup of water in the crockpot.
Cover and cook on low for 6-8 hours. Until beef is tender and you are able to shred easily.
In the meantime make the Horseradish Aioli, add 1/2 cup of mayo to a small bowl.
Add 2 Tablespoons of prepared horseradish and 1 Tablespoon of lemon juice to small bowl. Mix to combine.
Preheat oven to the high broiler setting. Slice 1 french loaf into 4-5 equal sandwiches, place 1 slice of provolone cheese on each sandwich.
Put under broiler until cheese is melted, 2-4 minutes.
Shred the beef shoulder using two forks until it is all completely shredded.
Top with a little bit of the Horseradish Aioli.
Finish off with some of the shredded beef. Serve with Mandarin Orange Cranberry Salad or Garlic Herb Roasted Potatoes.
