What do you think of when you think of that word?

Does it bring your more anxiety to think about it?

I think to a certain extent we all struggle with anxiety.

People can get anxious driving late a night. Taking an elevator up to the top of a building. Flying to a different country. Trying an unknown food for the first time. Walking down an alley in the dark. Being at home by yourself. Letting your children stay at a friends house.

When I looked up what the word actually meant {thanks google :)}, a whole slew of stuff popped up. The top 5 were about Anxiety Disorder, which tells me we have a very anxious society! Once I finally scrolled past the anxiety disorder links I found the Wikipedia definition of Anxiety.

Anxiety is a feeling of fear, worry, and uneasiness, usually generalized and unfocused as an overreaction to a situation that is only subjectively seen as menacing. Anxiety is not the same as fear, which is a response to a real or perceived immediate threat; whereas anxiety is the expectation of future threat.

That last line is the kicker “anxiety is the expectation of a future threat.”

Translation -> we live in fear, worry, or uneasiness of the thought that something bad MIGHT happen. Even though it hasn’t happened yet.

Doesn’t sound like a very fun way to live does it? To live in fear of something that may or may not happen. What happens if it never happens? What then?

When we are anxious about something it is showing us something deeper than just our feelings. It is a trigger to us of a false belief that we have about God or ourselves.

Do we really think that God is bigger than our biggest most horrible fear? That thing you think would absolutely “wreck you” if it happened? If we think he is bigger, than there is no reason to be anxious. Right?!

The awesome thing about God is that when we feel weak, anxious, worrisome, or fearful. We just need to give/release that thing we are worrying about to him and he carries that burden for us.

“So do not fear, for I am with you; do not be dismayed for I am your God. I will strengthen you and help you; I will uphold you with my righteous right hand.” Isaiah 41:10

Like for starters, check out this amazing recipe. Creamy Goat Cheese Horseradish Mashed Potatoes, its totally as good and BETTER than it sounds. I made these the same night I made the Mustard Crusted Pork Chops with Bourbon Apples and OMG – probably the best night ever!

These Mashed Potatoes are super creamy, with a unexpected hint of heat from the horseradish, and a speckling of salty pancetta to even everything off. Top it with freshly sliced green onions and this just became the mashed potatoes of your dreams! {or not dreams … reality … because you ARE making these}

I don’t know about you, but these are totally on my Easter Dinner menu! Served along side a juicy Brown Sugar Glazed Ham. Want to come over for dinner? 🙂

Creamy Goat Cheese Horseradish Mashed Potatoes

Description

Throw boring homemade mashed potatoes out the window and make Creamy Goat Cheese Horseradish Mashed Potatoes instead! Seasoned with garlic and topped with green onions and pancetta, these flavorful potatoes will have you hooked.


Ingredients

Scale
  • 2 lbs. red potatoes, diced (skin on)
  • 1/2 cup of 2% milk
  • 4 oz. goat cheese, softened
  • 1 garlic clove, minced
  • 2 tablespoons of prepared horseradish (not the sauce)
  • 1 tablespoon of grape seed oil
  • 3 oz. of pancetta, diced
  • 1/4 cup of green onions, sliced
  • salt & pepper to taste

Instructions

  1. Add potatoes to a large pot filled with water. Place on medium high heat, and cook for 15-20 minutes (the smaller you cut your potatoes the shorter it will take)
  2. In meantime, heat a medium size non-stick skillet to medium high heat. Add grape see oil and pancetta to the pan.
  3. Saute until pancetta is slightly browned, about 4-6 minutes. Remove from pan and place on paper towel lined plate. Set aside.
  4. Once potatoes are done, drain water from pot leaving just the potatoes. Add milk, goat cheese, garlic clove, horseradish, salt, and pepper. Using a hand mixer or potatoes masher, mash your potatoes to desired consistency. (and make sure that goat cheese is completely combined)
  5. Add in pancetta and green onions, mix in and serve!

    not to make light of anxiety, because I know all to well what that can do to a person, but it would be hard to feel anything but happy while enjoying these potatoes – LOVE the addition of horseradish, and will be adding them to our Easter feast
