Creamy Goat Cheese Grits and Eggs with Roasted Vegetables

Description

The ultimate easy and healthy breakfast recipe that’s a taste of the South! Creamy Goat Cheese Grits and Eggs with Roasted Vegetables is a hearty and filling breakfast idea for any morning.


Ingredients

Goat Cheese Grits:

  • 1 cup of grits
  • 4 cups of water
  • 1/4 teaspoon of salt
  • 4 oz. of goat cheese

Roasted Vegetables:

  • 1 large red pepper, cut into 1” cubes
  • 1/2 large red onion, cut into 1” cubes
  • 1 large zucchini, sliced into 1/2” slices
  • 1 large yellow squash, sliced into 1/2” slices
  • 1 pint of cherry tomatoes
  • 23 tablespoons of olive oil
  • salt & pepper

Other Ingredients:

  • 4 eggs
  • chopped chives {optional for garnish}

Instructions

  1. Preheat an oven to 400 degrees.
  2. Add red onion, red pepper, zucchini, yellow squash, and cherry tomatoes to a baking sheet. Season with olive oil, salt, & pepper. Toss to coat then spread vegetables out into a single layer.
  3. Roast vegetables for 30 minutes.
  4. Remove from oven and let sit.
  5. Heat a large pot to medium high heat, bring water and salt to a rolling boil.
  6. Slowly add in the grits stirring the whole time with a whisk to avoid clumping.
  7. Turn down to medium and cook grits for 5 minutes, stirring frequently.
  8. Add in goat cheese and continue to stir until goat cheese is melted.
  9. Heat a medium non stick pan to medium high heat. Add 4 eggs to pan, season with salt & pepper turn burners down to low and cover. Let eggs sit for 4 minutes until whites are cooked.
  10. Serve grits with roasted vegetables and fried egg.
  11. Devour!
