This Chocolate Chip Banana Bread is moist and fully loaded with lots of goodies. It’s made with white whole wheat flour for the ultimate healthy banana bread!

Ok, today I have ALOT of things on my mind. So I’m just gonna spill and see what you think and then finish it off with a tasty recipe. Sound good?

Yesterday at church was really striking and convicting to me.

The message started off with a video. The video was of an guy who use to draw sketches of the “bad guys” for the FBI, but in this video he wasn’t drawing sketches for the FBI, it was something different.

The FBI sketch artist was sitting behind a big curtain with an easel in front of him that had a huge sheet of paper on it. On the other side of the curtain was a couch that had a person sitting on it. The FBI artist had never seen the person on the other side of the curtain. He was asking questions of the person to describe how they looked.

What does your chin look like? How about your eyes? How long is your hair? Do you consider yourself to be a happy person?

After each question he would draw what they described and ended up with a completed portrait of what that person “looked like.” After he finished he then had a different person come in and sit down to do the same thing. Except this person was describing the person who had just gone.

What did their eyes look like? Was their face thin or chubbier? Did they look happy? What about their lips?

Again, after each question he would draw what they described and ended up with a completed portrait. He then brought the original person back in and showed them the drawings. On the left was the first drawing he did {so what they described of themselves} and the drawing on the right was the drawing that the second person described.

The person was amazed at the difference. The first drawing looked like a person who was chubbier, closed off, unhappy, and not well put together. The second was of a person who looked happy, thinner, and beaming with life. The interesting thing is that the second picture looked much more like what the person actually looked like than the first.

Most people don’t think the world of themselves, they usually think the opposite {aka… the worst}? When you describe yourself how would you look? How would others describe you? What about your personality? How do you view yourself? Now, what would others say of you?

Why is it that the one person {YOU} who should know the facts of what you look like and who you really are is so way off? Why do we choose to believe the worst about ourselves instead of the best?

If our view of ourselves is so off, how do you think we view the world we live in, what about our families, our kids, our spouse, or God?

My heart at the end of the message yesterday was this… Lord, help me to see myself the way you see me.

Ok, so that was just a little of where my heart and mind are at today. Here is where my stomach is at.

Chocolate Chip Banana Bread!!! One word… phenomenal!

This bread came about because I had 6 bananas that were about to go bad on my counter and I needed a way to use them up. I didn’t want to make just plain old banana bread so I decided to amp it up with some chocolate chips {because that makes everything better}, chopped pecans, and then coconut oil & unsweetened coconut flakes.

Can I just tell you this might be my new favorite bread! Ok, I will. It is my new favorite. It is moist, has some texture to it, has that same yummy banana bread bit that everyone loves, and then of course the chocolate chips.

Because I had so many bananas I ended up doubling the recipe below and made mini loaves so I could hand out the goodies to our neighbors and Mike’s co-workers. {yeah… I know bet you wish you were my neighbor :)} But believe me, we still kept plenty at our house to devour too! I hope you enjoy it!

Description

This fluffy banana chocolate chip bread recipe with cinnamon is naturally sweetened with maple syrup for the perfect morning bite.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 4 bananas, mashed
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1 1/2 teaspoons vanilla
  • 2 eggs
  • 3/4 cup semi sweet chocolate chips

Instructions

  1. Preheat oven to 350° F.
  2. Spray a loaf pan with cooking spray. Set aside.
  3. To a large bowl, add all purpose flour, baking soda, cinnamon, nutmeg and salt. Stir together and set aside.
  4. To a medium bowl, add mashed bananas, maple syrup, melted coconut oil, vanilla extract and 2 eggs. Whisk together until the wet ingredients are smooth.
  5. Add dry ingredients to wet mixture. Using a spatula stir all the ingredients together.
  6. Add chocolate chips and mix together until combined.
  7. Pour the banana bread mixture into the prepared loaf pan. Smooth out to make sure the batter is even.
  8. Place in oven and bake for 45-50 minutes or until it passes the toothpick test and comes out clean.
  9. Remove from oven and let rest for 10 minutes before devouring!
