Coconut Oatmeal Chocolate Chip Skillet Cookies

Last week Thursday I read something that about brought tears to my eyes. The words jumped right off the page and cut straight to my heart of hearts, through all the bull crap and walls I had put up.

What did I read?

Well, it was this.

Many of you know our struggle to get pregnant with our second child. We’ve been trying for two years and I truly believe with everything in my heart that God has promised us a second child. But for whatever reason it hasn’t happened yet. I’ve gone through seasons of frustration with my body, with God, with other people who seem to get pregnant just by their husbands looking at them. Then I’ve gone through seasons of peace and contentment with waiting on Gods timing.

I feel like right now I’m in the later season but after reading this devotional on Thursday I realized, I’ve forgotten to ask. I’ve forgotten to ask for God to bless us with a second child. I think I had asked so much in the past that I became tired of asking and never receiving. So I just stopped.

How do I expect to receive if I never ask?

I mean think about it. I tell Cason to ask me if he wants something. Anything. Most of the time, if it is good for him, I will give it him. Why? Because I love him and want to give him good things that will make him happy. I love seeing the joy and excitement on his face.

So if we, in our humanness desire to give our children anything they ask for, how much more do you think God desires to bless his children? All we have to do is ask!

All that to say. I’m going to start asking again.

While we’re on the subject of asking. The other day Cason was asking me to make some chocolate chip cookies. Soo… of course I was going to make them! {chocolate is always good for you} But I wanted to change up the recipe a little bit!

I’ve eaten my fair share of pizookie’s {skillet cookies} at restaurants but I have never made one at home. Well, today I am changing that in the best way possible!

These Coconut Oatmeal Chocolate Chip Skillet Cookies are only 213 calories per serving and boast of gooey sweet chocolatey flavor! These Skillet Cookies are filled with healthy oats, white whole wheat flour, unsweetened coconut, chocolate chips, and honey! It’s like Oatmeal Cookie meets Chocolate Chip Cookie and makes the most delicious baby EVER!

Description

Chocolately, gooey and delicious Coconut Oatmeal Chocolate Chip Skillet Cookies made with a few secret ingredients to make this version lighter. You may fall in love!


Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1/4 cup honey
  • 1 1/2 regular oats
  • 3/4 cup white whole wheat flour
  • 1/4 cup unsweetened coconut flakes
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • pinch of salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350.
  2. In a large bowl, mix oats, flour coconut flakes, baking soda, baking powder, ground cinnamon, and salt.
  3. In a stand mixer, add butter and brown sugar. Mix until creamy. Add egg and honey. Mix until combined.
  4. Slowly add in dry mixture until just combined. Add in chocolate chips.
  5. Scoop batter into one large cast iron skillet or three mini skillets.
  6. Bake for 15-20 minutes.
  7. Optional: serve with vanilla ice cream

    I have this in the oven as I type. I am hoping it turns out really yummy. My husband was skeptical because his family makes the best homeade chocolate chip cookies. How could I ruin that. lol. I just had to try this skillet cookie. I’m hoping he will love this recipe as well as his own. Thanks and I will say a prayer for you and yours. God is able, He will provide. We may not agree with his timing and his Will but He does know best.

  3. Hi there! While this looks delicious (and I’m eager to make it), I believe your nutrition facts are quite off. Unless I’m not seeing something, you may want to recalculate.

    1. Hey Nahhan, these facts do not include the ice cream or chocolate on top. In the ingredients list both of those are listed as optional. So the nutritional facts are calculated on the cookie alone. šŸ™‚

      1. I’m sorry, I calculated it that way from the start (without the optionals), and still have a completely different number. Exactly how many servings is the recipe supposed to yield? I hate to be annoying…

        1. No problem Nahhan, it would yield 3 mini skillet cookies or 1 large skillet cookie, I have calculated it to be 1/3 of one mini cookie or 1/12 of a large cookie. Make sense. When I ran with these numbers in myfitnesspal.com the nutritional information listed is what came up.

    Hi Krista – A pastor at our church spoke about doing “prayer circles” when he and his wife were hoping and waiting for a second child…hang in there and keep asking!

    1. Question……you just say “large” skillet. I’m not sure what you consider a large skillet. I have a 10″, 12″, 14″ and a 16″ cast iron skillet. I’m assuming you are referring to a 10″ skillet? I realize not everyone has the cast iron cookware I have but thought I’d ask.
