Ok, so if you have been following me for a while you may know. I love to eat healthy food, but I’m also not one to turn down a big chocolate chip cookie staring me in the face. 🙂 I like to have chocolate chips in the house at all times just in case I {I mean my husband} gets the urge for a chocolate chip cookie. That way I can whip up a quick Raspberry Chocolate Chip Cookie or my favorite Banana Chocolate Chip Cookies, whenever I want.
Last week I was watching the Pioneer Woman on the Foodnetwork and she was making all kinds of cookie recipes. Which of course, if your human, will make you want to eat cookies. I was trying to think of a way to make cookies that would tell me husband “I’m thinking of you” even though I was really thinking of me and my cookie craving. {don’t judge!} I came up with this Coconut Oatmeal Chocolate Chip Cookie. Mike loves fruit added to his cookies, usually its raspberries but he also loves coconut.
I like to use the unsweetened coconut because with the sugar and chocolate chips in the cookie I find it is already sweet enough. These cookies are absolutely amazing. You feel healthy because the majority of the cookie is oats, then you get slight tastes of sweet from the coconut and chocolate chips. Its a great change up to the plain old chocolate chip cookie.
To get started, preheat oven to 350°. In a large bowl, mix 1 1/2 cup of regular oats, 3/4 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of cinnamon, and a pinch of salt. Mix to combine.
In a stand mixer, combine 1/2 cup of unsalted softened butter with 3/4 cup of brown sugar. Mix until creamy. Next add 1 egg.
Slowly add in the dry flour/oats mixture until just combined and gently fold in 1 cup of semi-sweet chocolate chips and 1/4 cup of unsweetened coconut flakes.
Scoop 1 tablespoon of the cookie batter on baking sheet and place 2 ” apart. Bake for 10 minutes. Serve! {should make 2 1/2 dozen}

Oh my goodness,these are heavenly! I confess that because I did not have all purpose flour on hand, I substituted whole wheat flour. They still turned out wonderfully!

Every red-blooded American boy knows there are no ways to improve the tollhouse chocolate chip cookie. Coconut is mere chickification. The only conceivable improvement is for mom’s or the boys (like I did) to make dozens more in their kitchens. Lotsa milk, too.

These cookies are delicious. I have made four batches in the last two weeks. We have had a number of guests in our home recently and these cookies are a big hit. It’s a really simple recipe which makes it a double gold star. Yummy!

Hey Rena, I only had quick cook oats in the pantry so I used that but I make this recipe with regular oats normally. So yes, use regular oats not steel cut. 🙂 Hope that helps girl, and GOOD EYE! 🙂
