These Cinnamon Toasted Almonds are a healthy snack option for during the day and only require 4 ingredients to make.

Do you ever just dream?

I mean really dream? Like if nothing was stopping you, what would you do?  Is there something that you have always loved doing that you wish you could do on a permanent basis? 

I think we ask ourselves these questions when we’re little. You know, when someone asks a little kid what they want to be when they grow up and they say “A doctor, or a police officer, or an astronaut.” But then once we become “adults” we just stop dreaming. Why?

God puts those dreams, loves, and passions in our hearts for a reason. What if you were really meant to be a famous photographer but because you didn’t think you were good enough, creative enough, or smart enough you just didn’t pursue it. Think of what you missed out on.

The joy, the fulfillment in doing something you love, the success that comes with it. But instead, because we don’t BELIEVE we could ever achieve that we don’t even pursue it.  What does that say about what we think about ourselves? Do you think you are capable of greatness?

What do you dream about? What are you passionate about? These are just some of the questions I have been asking myself lately and it has really challenged me.

Ok, off my soap box. Just wanted to leave you with some things to think about AND a recipe! So here comes the recipe part. 🙂

I am always looking for something to snack on during the day and these Cinnamon Toasted Almonds are not only absolutely delicious but also crazy easy to make and only call for 4 ingredients. Once these Almonds are tossed with cinnamon and toasted to perfection they are good to go and ready to be snacked on. My husband likes to mix them with raisins, he says they taste like your eating a Cinnamon Raisin Bagel. To give him credit, I tried it and it kinda does, and who doesn’t want to eat a Cinnamon Raisin Bagel. 🙂

To get started, preheat oven to 250º.

Cinnamon Toasted Almonds in a ramekin

In a large bowl, add 2 cups of whole raw almonds, 1 teaspoon of cinnamon, 1/2 teaspoon of salt, and 1 tablespoon of olive oil.

Toss to coat all almonds thoroughly. Spread out on baking sheet in a single layer.

Roast for 1 hour, remove from oven and serve immediately or store in air tight container.

Ingredients

Scale
  • 2 cups of whole almonds
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 1 tablespoon of olive oil

Instructions

  1. Preheat oven to 250º.
  2. In a large bowl, add almonds, cinnamon, salt, and olive oil.
  3. Toss to coat all almonds thoroughly. Spread out on baking sheet in a single layer.

  1. I made these almonds and they were great. They start off salty and then have a cinnamon finish . You definitely can’t eat just one! I try not to eat a lot of sugar and it’s nice to have this snack on hand.






  2. These are pretty good, but I can barely taste the cinnamon. The oil flavor is overwhelming. But the lack of sugar is very satisfying!






    1. Glad you liked it. I’d definitely suggest adding more cinnamon next time if you felt the cinnamon was lacking.

    Krista, I love it! I always tell my boys to never stop dreaming. Remember, my oldest is an adult… and he still is living his dream and it’s all coming true! He thanks me for always reminding him to keep dreaming and never give up. (Proud mama here!)

I had to make myself stop baking nuts because I eat them so fast 🙂 I’ll have to make an exception here – these look to good not to try, even if they will be gone in a day! p.s. love your thoughts on dreams!     First of all, I’m excited to try this recipe and have cinnamon toasted almonds as a healthy snack option for me 🙂 I’m working on planning my meals/snacks daily now and it’s helped a ton for me personally!

    And, second, thank you for this great reminder. After I got married and we had Baby #1, I almost felt like I shouldn’t dream or it’s selfish for me to have my own dreams. Jesus is my ultimate passion and my family is right after Him. My “dream” would be running marathons in random locations throughout the country (or world) and coaching others to reach their running and strength training goals.

    I’m reminding myself today; God put those dreams on our hearts for a reason. Thank you and God bless!






    1. Awesome Amy, the planning part is the hardest, but once you get that routine down you are good to go. I usually plan on sundays and do all my shopping on mondays. 🙂

      Oh, so glad that this encouraged you. It really is hard, first off once you get married and then secondly once you have that first baby. You are absolutely in love with that baby and don’t want to leave them for a second so those dreams get put on hold, because something else is more important at the time. The key is to not let those dreams and passions that God has placed in you die or get forgotten.
