Emily over at It Bakes me Happy is taking over the blog today and I’m so glad she did so I could see this yummy recipe! Here she is!

Hi I’m Emily from It Bakes Me Happy, I have a serious sweet tooth and an ever growing love of spending time in the kitchen. When Krista asked if I would lend a hand while she’s busy off having some fun and relaxation, I just couldn’t resist. I love to bake and cook yummy food to share with my friends and family; so of course that means you too!

I’m seriously addicted to chocolate; specifically brownies. So today I thought it was only logical to share a chocolate recipe. It’s still pretty warm here in Florida and my toddler requests popsicles on an almost daily basis. My in laws have a pair of avocado trees from which they generously share their bounty. My daughter used to be a huge avocado fan up until recently, so I’ve turned down a ton of fruit this year. But a few weeks ago my father in law was over visiting and brought us a huge avocado. It sat on the counter until it was ripe, I then transferred it to the fridge and forgot about it. I knew you could make pudding from avocados but had never been brave enough to try it, I’m not an avocado fan myself.

These creamy, chocolate and avocado popsicles were a big hit with my little one and I even enjoyed them too! The chocolate doesn’t take away the avocado flavor completely, but it helps to tone it down. I recommend sweetening these to your taste, which may mean using more or less honey or other liquid sweetener. I have a good feeling you’re going to be making these again and again.

Description

These Chocolate Avocado Pudding Popsicles are a healthy, refreshing dessert option that’s super easy to make! Look no farther for your new go-to summertime treat.


Ingredients

Scale
  • 2 cups avocado, ripe
  • 4 Tablespoons of honey
  • 2 Tablespoons of semi sweet chocolate chips
  • 2 Tablespoon cocoa powder
  • 2 Tablespoon almond milk
  • 1 teaspoon coconut oil
  • 1 teaspoon vanilla extract
  • Dash salt

Instructions

  1. Peel and slice the avocado.
  2. In a food processor blend the avocado until smooth.
  3. In a small bowl melt the chocolate in the microwave at 15 second increments. Add the honey, cocoa, almond milk, coconut oil, vanilla and salt; stir until smooth.
  4. Add the chocolate mixture to the avocado purée and blend until combined. Transfer the pudding into Popsicle molds and freeze for 4-6 hours.
