Easy Carrot Zucchini Bread
Mike and I leave for Mexico in a month in a half for our 7 Year Anniversary. I am so excited! We are actually going back to the same place we went for our Honeymoon, it was an all-inclusive and absolutely amazing! To get our bodies “beach ready” both Mike and I have committed to doing crazy workout videos from now till our vacation. I am doing the Brazilian Buff Lift video {come on ladies, who doesn’t want a good looking butt!} and Mike is doing Insanity. All I have to say is … HOLY COW are my thighs and butt sore!!! My 20 something year old body is walking like a grandma, it’s ridiculous. Have any of you done one of these workouts yet?
Along with working out, obviously you need to eat right or the workouts are for naught. With all the Zucchini Recipes I have seen on Pinterest lately and from other bloggers I was starting to feel left out. In order to fit in with the “cool crowd” I decided to make this easy Carrot Zucchini Bread. There is nothing better than a good zucchini bread, it is definitely one of my favorites even oven banana bread. Ok, maybe there is one thing better… Carrot Zucchini Bread! It’s like Carrot Cake and Zucchini Bread combine to form one superhero bread… but healthier! It’s awesome! 🙂
How to Make Carrot Zucchini Bread
To get started, preheat oven to 350º. In a small bowl, mix 1 cup of all-purpose flour, 1/2 cup of whole wheat flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 2 teaspoons of cinnamon, 1/4 teaspoon of ground nutmeg. Set aside.
Grate 1 3/4 cups of zucchini and 1/2 cup of carrot. Set aside.
In a large bowl, mix 2 eggs and 1/2 cup of applesauce until well blended.
Next, add in the 1/2 cup of brown sugar and 1 teaspoon of vanilla. Whisk until combined. Add grated zucchini and carrots, stirring until combined.
Slowly add the flour mixture to the wet mixture until just combined. Pour mixture into prepared greased loaf 8×4 pan.
Bake for 50-60 minutes, or until toothpick inserted in the center of the loaf comes out clean.
and then move to a wire rack to cool completely.
This a great grab and go breakfast for those running late school morning or a mid afternoon snack.

I’m not sure what went wrong. I follow the measurement and instruction carefully and I even drained off excess water from my shredded zucchini, but the whole loaf doesn’t bake through despite me baking it for 80 mins. I have to chuck the whole loaf away. :'(
Ohhh I’m so sorry Jessica. I’m not sure what went wrong. I’ve made this multiple times. I would try maybe less zucchini next time and see if that works.
This Bread is beautiful, and thank you for the small amount of sugar. It has a quarter of the amount of a similar recipe, yet tastes amazing.

Do you think that this bread could be baked and then put in the freezer for later this month? I think it would be a nice change to the usual Christmas baking. Thanks!
Yeah I think so. I would just let the bread cool and then wrap it with plastic wrap and/or tin foil to make sure it keeps. 🙂 Great thinking on trying to get ahead on the christmas baking!
Stumbled upon this recipe cuz i had a zucchini and 2 carrots in my fridge. It wasn’t enough for the recipe so I added an apple also. It turned out great for such an healthy recipe. The only thing I’d change is next time I’ll add chopped nuts. Thanks for this great recipe!

Just made this recipe into muffins – my 3 year old loved them! I didn’t have any applesauce so I subbed with coconut oil. Yum!

I love zucchini bread but I’ve never thought to add carrots. Awesome idea! It’s great for any time of the year but as we approach days where good fruit isn’t easily available this will be the perfect bread to whip up. 🙂

Ohhh mah gah girl. We did Insanity last summer. It is bananas. But WAY less annoying than the P-90X guy. I can’t listen to that dude talk for any minutes, much less an hour and a half. Insanity will shave off the pounds FOR SERIOUS. This bread looks beautiful!! I love carrot bread and zucchini bread and I’m sure the combination is dreamy! The great news about crazy workouts is that you can have delicious bread and not feel the slightest bit guilty.

You were the brains behind the bread, I just altered it! 🙂 It was delicious. As far as the workout, I’m only on day 4. I had been working out prior and consider myself in good shape, but man… they are definitely intense.
I’m a fitness instructor and Insantity is probably one of the hardest work out’s you can do! Keep at it though, you’ll be pleased with the results! And, I love that you made a healthy style zucchini bread! Yum-o!

When I go to the gym all we ever talk about is food! I am a caterer too, so I tease my clients that being a caterer and a fitness instructor is job security for me…I make them fat, than I have to whip them in shape, it’s a never ending vicious cycle!
But, I do love to share great healthy YET yummy recipes with them all at the gym so this zucchini bread fits perfect to share!

Hehe me and my husband do the same thing – work out like crazy right before leaving for a trip..And yes, I want a nice butt..def could use some help in that department. Always. I have tons of zucchini on hand so this bread sounds fabulous! I wonder if it freezes well..
🙂 Well, I was working out before this. I would just go to the gym lift and do cardio. But, since we are going to be in swimsuits I thought a specified workout would be better!
