I thought I would “help a sister out” and give you a recipe that will take you straight to the islands and get rid of any case of the Mondays that might be looming over your head. After all, Island food, wine, and the Bachelorette.

What else could a girl ask for on a Monday!?

So todays recipe is inspired by my trip to St. Lucia.

When we first got to St. Lucia we had an awesome stud of a driver from Serenity Tours pick us up. His name was Hans and let me tell you.. this guy knows his stuff and is such a nice guy. It was a 2 hour drive from the airport to our hotel so believe me, we got to know Hans and Hans got to know us!

One of the things he told us about was the local “Street Party.” Every Friday night the police shut down one street in Gros Islet, a local marina town in St Lucia, and have a party all night. They have local food, cocktails/beers served out of coolers, the ever famous homemade Rum Punch, and live music.

I was thinking that Live Music meant.. just that.. LIVE music. Then when we walked down the street I saw a guy on this lap top with big speakers – that was the live music. We ended up going with a couple that we met at the resort we were staying at, going in pairs is always a good thing.. hehe and we had a blast together! At one point I was dancing with a 60 year old local man at the street party and this guy would not leave me alone … and my husband  (ahem) was just standing and laughing at me instead of rescuing me! It was a hoot!

Beyond the dancing the local food was awesome! St. Lucia is known for its bananas! They have TONS of bananas and of varying kinds. One of the things we had at the Street Party was Green Fig (shout out to Hans for recommending this). This stuff is incredible! It is basically like a potato salad but instead of potatoes they use Green Bananas!  To be honest, I liked the Green Fig better than our American Potato Salad, it was delicious! Along with the Green Fig we had these Fresh Grilled King Fish Kabobs with a sweet sour sauce served on the side and wow were these amazing! The King Fish was so tender and when combined with fresh pineapple and seasonal peppers that are used in almost everything served on the island it made this dish a home run!

These Street Party Kabobs are what inspired todays Caribbean Grilled Salmon Kabobs! To be honest, I had never purchased Cajun seasoning in my life but after eating the food in St Lucia I knew it was going to be one of my first purchases State side. 🙂

The fresh salmon for these kabobs are rubbed down with a cajun spice blend and then alternated with fresh chunks of pineapple, red onion, and mini bell peppers on a skewer.

I seriously cannot even tell you how amazing this was! I don’t even really like salmon that much, in fact I think I have one recipe on JHE that is a salmon recipe {well now two :)}. I could eat this stuff all day. The spice from the salmon combined with the sweet juicy pineapple and sweet bell peppers is absolutely perfect. You could serve this as a main dish or cut the skewers in half and serve as an appetizer! Either way, this dish will totally bring you to the Caribbean! I know it brought me back to St. Lucia!

Description

These Caribbean Grilled Salmon Kabobs will take you straight to the islands with the cajun spices, fresh pineapple, bell peppers, and fresh seafood!


Ingredients

Scale
  • 2 lbs. fresh salmon (skinned), cut into 1″ cubes
  • 23 cups of fresh pineapple, cut into 1” cubes
  • 1 red onion, cut into 1” cubes
  • 15 mini bell peppers (assorted colors), may need to half some depending on size
  • 2 tablespoons cajun seasoning spice {I used McCormicks Brand}
  • 1 teaspoon garlic powder

Instructions

  1. Soak wooden skewers in water for 15-30 minutes.
  2. Preheat grill to medium high heat or 400 degrees.
  3. Pat Salmon dry and cut into 1″ cubes.
  4. In a small bowl mix cajun seasoning spice and garlic powder, stir with a spoon.
  5. Season both sides of the salmon cubes with cajun spice blend. Gently rub the seasoning in to make sure it sticks to the salmon.
  6. Alternate the red onion, pineapple, bell peppers, and salmon on the skewer until it is full. Repeat process.
  7. Spray grill grates with PAM or rub down with olive oil.
  8. Place salmon kabobs on grill and cook for 2-3 minutes per side.
  9. Remove from grill and serve!
