Baked Chicken Caprese

This fresh Caprese Chicken with Balsamic Reduction is a good way to spice up your chicken dishes during the week. This chicken recipe is so delicious and super easy to make!

Caprese Chicken with Balsamic Reduction

I know, I know.  I just posted a Caprese dish last week.  You’re probably thinking… “Change it up a bit Krista!” 🙂

But guess in my defense, I’m having surgery this morning to get my wisdom teeth removed {finally} and I needed a recipe to post for you in a snap. 🙂 This was a recipe I had been saving for a while now.  I was waiting for the right time to pop another Caprese dish on you.  Lucky you, you get it earlier than I had planned! 🙂

Just keep in mind, while you are making this dish.  I will be sitting at home with bags of frozen peas over my puffy cheeks, “eating” liquids and dreaming of solid foods. I hope I heal fast, I don’t know how long I will be able to stay on a liquid diet.

Anywho, this Caprese Chicken dish topped with a Homemade Balsamic Reduction will definitely be a crowd pleaser.  Not only for you, because it is super easy and fast to make. But because all of the flavors go so well together and compliment each other perfectly. I hope you enjoy it!

How to Make The Best Caprese Chicken

To get started, heat one large skillet to medium high heat. Season both sides of 4 boneless chicken breasts with salt & pepper. Place chicken breasts in skillet and cook each side for 6-7 minutes. {14 minutes total}

Slice 1 Beef Steak Tomato into thick 1/4″ slices.

Next, slice one 4 oz. ball of fresh mozzarella into thick 1/4″ slices and set aside 8 large fresh basil leaves.

To assemble place chicken breast on bottom, then 1 large slice of tomato and two leaves of basil.

Next, add 1 large slice of fresh mozzarella.

Lastly, drizzle a Balsamic Reduction over top the entire dish. {here is a link to my Homemade Balsamic Reduction}

Chicken Caprese with Balsamic Reduction

Description

This chicken caprese recipe with basil, mozzarella, and cherry tomatoes is an easy dinner with Italian vibes and a balsamic reduction.

Caprese Chicken:

  • 4 boneless chicken breasts
  • salt & pepper
  • 1 tablespoon avocado oil
  • 1 1/2 cups cherry tomatoes
  • 1/2 cup fresh basil, chiffoned
  • 4 oz. of fresh mozzarella, sliced into 1/4” slices

Balsamic Sauce:

  • 1/3 cup balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • salt & pepper to season

Instructions

  1. Preheat oven to 400°F.
  2. Make the Balsamic Sauce: to a small bowl add balsamic vinegar, mustard, honey, olive oil, garlic, salt and pepper. Whisk together until emulsified. Reserve 2 tablespoons of the mixture for later.
  3. Season both sides of boneless chicken breasts with salt & pepper.
  4. Heat one large skillet to medium-high heat.
  5. Add avocado oil to the pan along with chicken breast. Sear each side for 3-4 minutes.
  6. Next, add 1 cup whole cherry tomatoes to the skillet with chicken breast and pour the balsamic sauce over top. (leaving the reserved sauce for later)
  7. Place the skillet in the oven, uncovered, for 20 minutes.
  8. Remove from oven. Top each chicken breast with a slice of fresh mozzarella cheese.
  9. Put back in the oven for an additional 5 minutes, or until internal temperature of chicken reaches 165°F.
  10. Cut remaining 1/2 cup of cherry tomatoes in half.
  11. Remove chicken from the oven, top with halved cherry tomatoes, fresh basil and finish with remaining balsamic sauce.
