BBQ Pulled Pork Sweet Potato Bites

Guys, want to know something?

Parenting is hard stuff! Now, I know some of you might know this already but apparently I take a while to catch on.

When I first had Cason I knew things were going to be a shocker. After all, I never really babysat growing up and never actually changed a diaper! {true story, Cason was the first diaper I changed … EVER!} The sleep deprived days of the newborn stage were manageable because of the overwhelming love I had for him. I would enjoy getting up at that 2am feeding, sitting in his room rocking in the rocking chair, watching his sweet face, and feeding him till he feel asleep. Best memories ever!

When your pregnant or in that newborn stage people are giving you all the advice in the world! I filtered almost everything through, “what works best for my family.” But I will say, one of the best pieces of advice I got was about parenting itself, the quote was “Whoever raises their voice first loses.”

I don’t know exactly what that meant until I reached the toddler stage. I knew that I wanted to be the mom that would take a deep breathe before responding and speak calmly to Cason when he was being disobedient or just being a hand full. I feel like most of the time I do that, I keep my calm and speak to him in a tender voice.

But past couple of days I’ve realized I struggle with patience.

I think part of it is Cason is changing, becoming more independent, trying to test the limits, and just wanting to do what he wants to do.

Sooooo…. yeah! It’s exhausting and incredibly repetitive to say the same thing over and over again  without much change! I’ve noticed over the past week I don’t have the same patience as I did before and want that to change! Yesterday after Cason decided to dump every toy he had all over the living room I just sat on the floor, took a deep breathe and tried to remain calm all while feeling like I had a ticking time bomb inside.. “Alright buddy lets put up all our toys, we can’t take out another one until we put the other ones away.”

It’s hard, this parenting thing. And patience is most definitely a virtue, one that you have to train yourself to have! But if I remain calm and have patience, my hope and prayer is that he will have the same because he saw it modeled to him.

Ok, enough of me confessing my struggles.

How about we move on to the food?

Ya’ll! These BBQ Pulled Pork Sweet Potato Bites were dreamed up because I just really wanted BBQ, more specifically pulled pork but without the bread and grain! I’ve had a couple friends who’ve posted Sweet Potato Bites so I thought, why not put my pulled pork on a crispy sweet potato! Um.. genius!

The Pulled Pork is hands down one of my favorite recipes, it is sweetened by balsamic vinegar and dried apricots, but has a slight smoky taste from the smoked paprika. Absolutely amazing!

Topped off by a creamy whipped goat cheese and then some fresh green onions for a nice onion flavor these bite size appetizers are perfect for a get together or a game day treat!

One of the tips I have for these Sweet Potato Bites to be over the top stellar is make sure the potatoes are somewhat crispy. If they aren’t crispy, as soon as the pulled pork hits the top of these they will go soggy.  So make sure those sweet potatoes are crispy before you top them with deliciousness!

I cannot wait to hear what you think of these! My family and I absolutely loved them and they will definitely be the appetizer of choice this NFL season! Top view of BBQ Pulled Pork Sweet Potato Bites

Description

BBQ Pulled Pork Sweet Potato Bites are sure to be a family favorite. Topped with creamy whipped goat cheese and moist Pulled Pork with a few secret ingredients – you’ll be addicted after one!

Ingredients

Scale

BBQ Pulled Pork:

  • 23 lbs. pork loin roast {I usually trim the fat off before cooking}
  • 1 large red onion, diced
  • 3 whole garlic cloves, peels removed
  • 15 oz. tomato sauce (no salt added)
  • 1/2 cup balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 5 dried apricots

Sweet Potato Bites:

  • 2 large sweet potato, 1/4″ slices
  • 4 tablespoons olive oil
  • salt to season
  • 4 oz. goat cheese, softened
  • 2 tablespoons cream cheese, softened
  • 3/4 cup sliced green onions

Instructions

  1. In a medium bowl add diced onions, garlic cloves, tomato sauce, balsamic vinegar, smoked paprika, salt, and apricots. Gently mix together.
  2. Add pork loin to bottom of crock pot, pour balsamic mixture over pork.
  3. Cook on HIGH for 4-5 hours.
  4. Shred pork using two forks, leave pork in sauce.
  5. In a food processor add goat cheese and cream cheese. Blend until the cheese has a whipped appearance.
  6. Preheat oven to 425.
  7. Cover two baking sheets with tin foil and brush 1 tablespoon of olive oil on the tin foil.
  8. Add sliced sweet potatoes in a single layer to each of the baking sheets.
  9. Add 2 tablespoons of olive oil to a small bowl and brush on the top of the sweet potato slices. Season with salt.
  10. Bake for 10 minutes, rotate the pans 180 degrees and switch the placement (move the pan on the bottom to the top and the one of the top to the bottom) for even cooking.
  11. Bake for an additional 10 minutes, until slightly crispy.
  12. Assemble sweet potato bites: sweet potato slice, goat cheese, bbq pulled pork, garnish with green onions.

We’ve done a similar recipe, with minced chicken instead of pork. IT was fantastic, and so is yours!

These look AWESOME. My boyfriend always asks me to cook more pork, and I always want to eat more sweet potatoes. I think this would be a happy medium!

I have never heard that piece of advice but I LOVE it. While I have heard a few pieces of advice, I am surprisingly, have not heard as much as I thought while pregnant. Maybe because I never leave my house? Probably so 😉

And you have hit every flavor we love here! BBQ, sweet potatoes and goat cheese….sign me up!

    1. Well thats a good thing! I got bombarded by advice, but I was also out in the workforce at the time so maybe thats why! hehe

You will love these Meg, perfect for during your royals games! 🙂

I only have my dog, and while she likes to pull all of her toys out of her basket at the same time, I’m pretty sure it’s not the same thing as the toddler stage, lol! But, it sounds like you are doing a great job teaching your little guy right and wrong, and with your patience, I’m sure he’s learning patience too! By the way, these appetizers look amazing! I (sadly) could probably eat them all!

    1. haha.. love it Michelle.. too funny!

I am right there with ya on eating all of these… its definitely hard to stop! So good!

Those pulled pork bites look just fantastic. What a perfect appetizer! I think patience is the most difficult part of parenting for sure. Especially through that toddler/preschooler stage. And then they move on to a new phase and it’s something different! 🙂 I love that quote, I’ll have to remember that one!

    1. Thanks so much Stacey, glad you enjoyed the recipe. And you are so right, I feel like each year is a new stage and you need to adapt, so I know this stage will only be for a little while. The good thing is.. his cuddle stage hasn’t stopped yet hehe 🙂

Krista, I hear you sister .. hang in there. . it might get worse. . but the good thing is that as kids get older, they can communicate more .. which helps .. in the meantime, make more of these sweet potato bites. . I LOVE these!!!

    1. Exactly! The communication part is huge and its fun for me to help him process how he is feeling! 🙂

But yes, you are so right on .. in the meantime.. i’m chowing down on these bites!

I wish there was an easy button for patience some days but man it’s hard sometimes! I know I should have more but they sure can push those buttons. But hey! These potato bites look amazing!!

I have the most wonderful, loving parents and they are both so patient. Now, as an adult I have no idea where that strength came from because I can’t imagine doing it! I feel like I would loose my cool too often. So kudos to you, it takes a strong Momma to keep a level head in stressful situations, but I am sure when Cason is grown he will be able to look back and appreciate your efforts! 🙂
And these sweet potato bites, DELISH! That is like my most favorite combo ever.

    1. That is such a blessing Annie, I truly do think that makes a huge impact on a child growing up and impacts who they become! 🙂 Thanks for the encouragement, too sweet!

PS so glad you liked the sweet potato bites! They truly are amazing!

Parenting is definitely difficult, and I have so much respect for moms like you. Hopefully, Cason will grow out of his testy stage soon.

(awkward transition but….) These sweet potato bites are such a FANTASTIC idea!

    1. haha… yeah theres really no way to transition from that to food, I’ve just given up and accepted that when I right about life and food its going to be an awkward. 🙂 hehe

I hope he grows out of it too!

  17. Kids sure can test your patience – I think that’s why God makes them so cute 🙂 These little bites look so crazy good!

    1. haha.. right! I think its God’s way of teaching us more and growing our character! 🙂

Thanks Stephanie, glad you liked them!

Parenting is so hard. My son is three, and we are going through the exact same struggles with testing limits and asserting his independence that you are. I love that quote, “Whoever raises their voice first loses.” I’m going to remember that! I find that showing him lots of positive attention throughout the day helps some, but three is still such a tough age!

These sweet potato bites… I would have a very hard time stopping with these! I love that you added some goat cheese under the pulled pork!

    1. Yes it is a tough age, but also so fun. I guess thats the fun of parenting.. hard and joyful all in one! 🙂

So glad you liked these bites, they are seriously killer.. especially with that tang for the goat cheese! De-lish!

I agree…this parenting thing is hard. With a 14, 12 and 10 year old, patience is the biggest thing I struggle with. I try to remind myself to enjoy the kids and their quirks, training and discipling them in love along the way, because this certain age won’t last forever. I feel the size of a pea when people get impatient with me and I don’t want my kids to feel that way. Ever. Thanks for this recipe. I love that you put them on sweet potato slices. Looks amazing!

    1. Discipling in love is key and great reminder, they are always transitioning to a new stage and then I will need to figure out that stage. Its exhausting, exciting, frustrating, and the best thing in the world all at the same time. 🙂

Glad you liked the recipe too girl! Hugs!

    1. Thanks Aggie! 🙂 It is totally going to be our game day snack/dinner once football season rolls around!

Oh boy, I hear you…lately I have been feeling so impatient and it makes me feel so guilty. Maybe it’s summer and all of the freedom? Anyway, you are not alone! I LOVE these sweet potato bites too, great recipe!

    1. I think its summer, during the school year we both have “breaks” during the day from each other. I think the breaks are needed… for both parties. 🙂 hehe Glad I’m not alone!

I can’t say much about parenting, because I only have a dog. I’m sure they’re much different 🙂
BUT, These bites? I AM DYING. I actually have a very similar recipe coming out, and now I need to try your pulled pork version! Pinned!

    1. hehe.. just a little. At least yours doesn’t talk back to you! Major bonus there!

I can’t wait to see your version of it.. they are seriously addicting right?! Thanks for the pin girl!
