Baked Apples with Cinnamon Mascarpone

The perfect sweet treat this fall, tastes just like Apple Pie .. but better! And it takes half the time! Baked Apples topped with a slightly sweet creamy Cinnamon Mascarpone Cheese then garnished with Toasted Coconut. 

I have one goal that I NEED to meet by the end of the fall.

Wanna know what it is?

To make a pie from scratch. Not just any pie, a Lattice Apple Pie! Now, it might not sound like a big deal to you bakers out there. You may think, pffffff that is not a goal … I do that every week and twice on Sundays.

But for me, it’s a huge accomplishment. I am not a baker. I LOVE to eat baked goods but the idea of following a recipe exactly so as not to make it blow up in the oven drives me to my wits end. I don’t like being told what to add or what not to add, so I usually fudge the recipe a bit and it ends up a hot mess when I pull it out of the oven.

But this year I have goals. This year, I am going to make pie dough… FROM SCRATCH fill that pie dough with homemade apple pie filling and then top it with beautiful lattice work. You just wait! It’s going to happen!

But before it happens I needed to pump myself up a bit. Get ready. You know, prepare myself for the big finale.

I thought, let’s start with the apple portion first. No dough, just apples and then I’ll work my way up to the pie dough part.

These Baked Apples were a perfect place to start my apple pie adventure. I even learned something through the process. Granny Smith Apples don’t hold up too well in the oven when the skin is on. As I pulled my apples out of the oven and took the tin foil off. The flesh of the Granny Smith was looking very grainy and the skin was sliding down the side of the flesh…. not a pretty sight. I told you baking isn’t my thing!

What I did learn, and am so glad I decided to do two different kinds of apples, was that Ambrosia Apples do hold up when being baked! And they look gorgeous! Have you had Ambrosia apples before? Have you ever heard of them before?

Nope, me either. But I felt a little adventurous at the grocery store and they were on sale so I grabbed them.  Delicious! Ambrosia Apples are refreshing and kinda taste like pears.

Before I put them in the oven I snuck a small paper thin piece of butter on top, added a sprinkle of cinnamon, and then baked them till they were slightly tender but still had a bite. After all I’m not going for applesauce here, I still want a little form to the apple.

After the apples were done baking I topped them with a creamy slightly sweet Mascarpone cheese that has a mild cinnamon and nutmeg taste to it with a hint of maple. As soon as you put the mascarpone on top of the warm apples it starts to melt a little bit and OMG seriously heaven! Oh… but don’t forget to add the toasted coconut for a little crunch! YUMMERS!

So there you have it, my baby steps towards making apple pie…. Baked Apples with Cinnamon Mascarpone + Toasted Coconut! Not a bad way to start AT ALL!

Description

These delicious Baked Apples with Cinnamon Mascarpone are topped with toasted coconut flakes for the perfect fall dessert recipe. They’re like cute little apple pies!


Ingredients

Scale
  • 1/2 cup unsweetend coconut flakes
  • 1 1/2 cup water
  • 3 apples, halved, core removed
  • 1 1/2 tablespoon butter, sliced into 6 thin pieces (keep cold)
  • cinnamon to dash
  • 8 oz. mascarpone cheese
  • 1 1/2 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325.
  2. Spread coconut flakes in a single layer on a baking sheet.
  3. Bake for 5 minutes, until slightly browned. Remove from oven, place coconut flakes on a plate and let cool.
  4. Preheat oven to 350.
  5. Place apple halves in a glass 13×9 baking dish flesh side up. Add a piece of butter into the hole of each apple where the core use to be. Add a dash of ground cinnamon to each apple.
  6. Pour the water into the baking dish. Cover with tin foil.
  7. Bake for 30 minutes. This will make the apple somewhat tender but leave them with a slight crunch still. (If you want them really tender bake for 45 minutes.)
  8. In the meantime, add mascarpone cheese, maple syrup, cinnamon, vanilla extract, and nutmeg to a small bowl. Using a spatula gently stir until all ingredients are combined. Set aside.
  9. Remove apples from the oven.
  10. Serve each apple warm with 1-2 tablespoons of mascarpone and 1 tablespoon of toasted coconut.

  1. I love baked apples. They are so perfect for apple pick weather. Now usually when I have baked apples they are made sooooo not healthy but this version is so much better for the waste line šŸ™‚

    Haha, I have to gear myself up to make a pie too! This is the perfect way to start though…there is nothing better than the smell of apples as they bake! Love the addition of coconut here too!
