Donuts? Yah or Nah?

Ok, I have to admit I’m not much of a donut person which is kinda funny that today is a Donut Recipe.  But my boys are!

In fact, Mike and Cason have this tradition. Almost every Saturday morning they go for a donut run in the morning to start off the weekend with some father son time. {and my heart melts}

Cason absolutely loves this time! He’s all about the donut holes or just the plain old glazed donuts. Most of the time when they come back little man comes rushing in the door saying “I had donuts mommy… I had donuts… I did!” I’m not sure if its from the sugar or just pure excitement from going to get donuts with daddy. Either way… its pretty stinking cute.

So when those Mystery Dish Ingredients came out for this month I knew exactly what I was making… I had never made a donut before but was determined to try so I could make something special for my boys over the weekend!

This month Zainab from The Blahnik Baker was hosting and the ingredients she choose were:

Sesame seeds
Green chiles
Green tea or matcha powder
Cardamom
Ginger
Feta cheese
Lamb
Pinto beans
White wine
Prickly pear cactus
Apples

I ended up going with Baked Apple Donuts (with fresh ginger in it) and then topped with a Cardamom Cream Cheese Glaze…. and it was ooohhh so good!

So remember that time I told you that I had never made donuts before?

Well.. I learned my lesson. Apparently you don’t fill the donut tins all the way.

Why you ask?

Because half way through the baking process … you know that time when you peak into the oven to see how everything is doing… well the donuts are no longer donuts they look more like muffin tops and the “hole” that once was in the middle is no longer visible.

Which means in order to make it look like a donut..  you (or I) needed to recreate the “hole” so they didn’t look like frankenstein donuts in the shape of a mushroom top.

Sooo…. the next batch I did were more normal looking! Yippee!!

Either way they tasted amazing both times and the cardamom that was in the donut batter and the cream cheese glaze brought out so much flavor! It was the perfect fall breakfast!

Definitely one of my favorite Mystery Dish dishes thus far.. I truly hope you guys get a chance to try it.

P.S. donut pans are pretty stinking cheap.. I bought my for under $10 at our grocery store. So… go get you one!

Description

Healthier cake texture Baked Apple Donuts with fresh ginger and spicy cardamom topped with a homemade Cardamom Cream Cheese Glaze, the ultimate fall donut recipe!


Ingredients

Scale

Baked Apple Donuts:

  • 2 cups of white whole wheat flour
  • 1/2 cup of sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of cardamom
  • 1/4 teaspoon of fresh grated ginger
  • 3/4 cup of milk
  • 2 eggs
  • 1/4 cup of coconut oil, melted
  • 1 teaspoon of vanilla extract
  • 1 cup of granny smith apples, peeled & diced (about 1 large apple)

Cardamom Cream Cheese Glaze:

  • 4 oz. of cream cheese, softened
  • 3 tablespoons of maple syrup
  • 1/4 teaspoon of cardamom

Instructions

  1. Preheat oven to 375.
  2. In a large bowl, combine flour, sugar, baking soda, salt, cinnaon, cardamom, and fresh ginger.
  3. Add in milk, eggs, coconut oil, and vanilla extract. Toss till everything is combined.
  4. Fold in diced apples.
  5. Spray donut tin with PAM.
  6. Fill donut tins 1/2-3/4 of the way full.
  7. Bake for 10-14 minutes.
  8. Remove from pan and let cool on cooling rack.
  9. In a small bowl, mix cream cheese, maple syrup, and cardamom using a hand mixer. Combine until smooth.
  10. Top donuts with cream cheese mixture.
  11. Serve! {preferably with coffee… :)}

    so i saw the pic of your donut pan and totally was like, oh is this a batter you can fill the pan with? then i read further. i always have that problem, and i have a mini donut pan so you can image the problem being wayyy intensified. šŸ™‚ i made apple donuts this weekend too! šŸ™‚

    I feel like I could have written your post, I’m not a huge donut fan but my boys and husband are too, haha! He sneaks trips to Dunkin with them every once in a while. I guess I need to dust off the donut pan and try making them these!

    1. You so need to! When I did first off my hubbie was in shock that I had made donuts and secondly it made both my boys so happy! {which makes momma happy too}
