TGIF!!! I don’t know about you, but I have been looking forward to the weekend all week. We have had a string of sickness in our house so this weekend means sanitization of the Casa!!!

But before Operation “Total-Eliminatation-Of-The-Germs” takes place. Lets feast our eyes on this awesome dish!

Today this Apple Cinnamon Bread Pudding was inspired by a fancy date night out Mike and I had a couple of weeks ago. We went to this really nice restaurant called Jaspers. Can I just tell you, amazeballs!?! If I could ever choose what I would eat for my last meal, that place would be it.

More importantly this Bread Pudding would be it. It is the dessert of all desserts!

It comes out of the kitchen in a small little ramekin, piping hot with a salted caramel sauce drizzled all over it and then a homemade vanilla bean ice cream on the side. Mike and I had decided to share, which we normally do, but lets just say I wanted to hoard that precious little ramekin to myself. After we finished the last bite Mike looked at me and said, “yeah, you need to make that at home.”

Well, folks. I did! And you get to reap the benefts…. your welcome! I hope you and your special someone enjoy every bite of this Apple Cinnamon Bread Pudding.

On a side note, the title says “caramel sauce drizzle”. I was too lazy to make the caramel because I really just wanted to eat the bread pudding as quick as humanly possible, so I used the store bought bottle for the drizzle. *gasp* Its still just as good, but knock yourself out and make a homemade one if you’d like. 🙂

How to Make this Easy Dessert

To get started, preheat oven to 350°.

Bread should be stale. Either cut bread into cubes {removing the crust} and let sit out overnight or put in oven for 15 minutes at 300°. Place in a large bowl.

Grease a 1 1/2 quart casserole dish with coconut oil and set aside.

Next, heat a medium sized skillet to medium high heat. Add 1 tablespoon of coconut oil. Once melted add 2 cups of peeled and diced granny smith apples, 2 tablespoons of brown sugar, 1 teaspoon of cinnamon, and a pinch of salt. Stir and saute for 5-7 minutes, or until apple are slightly tender. Set aside.

In a small bowl, combine 2 eggs, 2 cups of milk, 1/4 cup of melted butter {1/2 a stick}, 1/2 cup sugar, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, and 1 teaspoon of vanilla. Pour mixture over bread cubes and let sit about 5 minutes. Pour into greased pan and bake, uncovered for 50-55 minutes or until puffed and browned on top.

Remove from oven and serve warm with warm caramel sauce or whipped cream. But honestly, the bread pudding is so good you may not even need the topping.

Ingredients

  • 4 Cups Dried White Bread (I used a french loaf, crust removed and cut into cubes)
  • 2 Eggs, Slightly Beaten
  • 2 Cups Milk
  • 1/4 Cup Butter, Melted
  • 1/2 Cup Sugar
  • 1 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Ground Nutmeg
  • 1 Teaspoon Vanilla

Apple Cinnamon Topping:

  • 2 cups of diced granny smith apples, peeled and cored
  • 1 tablespoon of coconut oil
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon
  • pinch of salt
