3 Ingredient Honey Mustard Glazed Carrots

Eeekk… my new Whitney English planner came in recently and I couldn’t be more excited.

Why am I so excited? Well, you see … things that help me stay organized, set goals, reach those goals, all while looking pretty just make me happy!!!!

It’s fun to look back on some of the things I put in that planner for 2015. Some of the goals I made I met back in June and others I haven’t reached yet. But the excited thing is looking back and then looking forward. Seeing a newly wrapped not opened yet planner just makes me giddy inside and pumped for the start of a new year!

Do you get excited about setting new goals? What about the start of a new year?

I know it’s only mid December but my mind goes there, before we know it Christmas will be over and you’ll be starting 2016! I think part of the reason I’m thinking of next year already is because I try to think ahead recipe wise to make sure I’m giving you guys things that are timely. For instance, December I have tried to focus on sweet treats, appetizers, healthy sides, and cocktails. (PS I can’t wait to share the new cocktail I made for you this week!)

January I’m thinking – more healthy recipes … obviously! But what else would you want to see more of in January?

Today’s recipe is the easiest side dish you will ever make … 3 ingredients and 25 minutes till pure carrot bliss! (yes “carrot bliss” is a thing)

The Honey Mustard Glaze Makes My Mouth Water

I kinda have this love for anything Honey Mustard. The sweet tangy combo makes my mouth water and the fact that all you need to make this sauce is honey and mustard basically rocks my world and it will yours too!

How To Make The Best Glazed Carrots

The key to this recipe is dressing the carrots in half the sauce before roasting them, letting the oven do the work to get that yummy honey mustard glaze all warm, bubbly, and soaked into the carrots. Then when you pull the carrots out of the oven drizzle them with the remaining glaze and it’s chow time … seriously drool worthy!

Description

These easy 3 Ingredient Honey Mustard Glazed Carrots are the perfect side dish recipe for any meal! The homemade honey mustard glaze is so delicious and is Paleo friendly and gluten free!


Ingredients

Scale
  • 2 bunches of carrots (1013 carrots)
  • 2 tablespoons stone ground mustard
  • 3 tablespoons raw honey
  • salt to season

Instructions

  1. Preheat oven to 400.
  2. Cut off greens from carrots. Wash and place on a baking sheet.
  3. In small bowl, add honey and mustard and whisk until combined.
  4. Drizzle half of the mixture over the carrots. Rub into the carrots using your hand. Season with salt.
  5. Bake for 15-20 minutes, or until tender.
  6. Remove from oven and drizzle with the remaining honey mustard mixture.
  7. Serve

    And these carrots – I am LOVING how easy this is!
