Easy to make Zucchini Noodles with a homemade Ground Turkey Meat & Mushroom Tomato Sauce. This meal is done in 30 minutes and leaves you feeling like you gave your family a nourishing meal!

So fun, right? I posted it on instagram the other day and have fallen in love with it since.

This handy Spiralizer was my Mothers Day gift. I have been wanting to get one for a while, well… that and a waffle maker! :) But I am totally stoked that this came first!

I cannot even begin to tell you how easy this thing is! All you do is cut the ends off the zucchini, put it on to the end stablizer side and start cranking away. Viola… noodles! Cason even had fun doing this. We did 3 huge zucchini’s in literally 5 minutes!

Have I told you that I love this thing? I do!

It is a great way to sneak extra veggies into your meals!

Usually Cason is not a fan of zucchini, I think its the skin. He just spits it out ever time. But cut into these mini noodles and topped with a Turkey Meat & Mushroom Tomato sauce, he was asking for seconds!

Ok, enough of my excitement on the Spiralizer front. Today is also exciting because it is Mystery Dish Day.

Our host for this months Mystery ingredients was, Cate from Chez Catey LouShe definitely gave us a fun challenge this month with a basket like this: raspberries, peanut butter chips, edamame, lemon, yeast, whole wheat pastry flour, bacon, buttermilk, basil, and zucchini.

What would you make with this?

Well, I decided to whip out my Spiralizer for the first time and make some Zucchini Noodles. But that was only one ingredient, so I decided to make a Ground Turkey & Mushroom Tomato Sauce from scratch and added fresh basil from my garden! :)

Not only was this dish super easy to make and done in 30 minutes. But it is gluten free and part of the paleo diet! Plus you just feel better about what your eating because its not packed with carbs or grain which can make your stomach feel heavy afterward.

The only thing I would recommend is after sauting the zucchini to cook them, let them sit for 2-3 minutes and drain the water a little bit. Other than that, this dish is a perfect healthy meal for your family!

Zucchini Noodles with Meat Mushroom Tomato Sauce

Serves: 4-6
Ingredients
Zucchini Noodles:
  • 3 large zucchini, spiralizer
  • 2 tablespoon of olive oil
Meat Mushroom Tomato Sauce:
  • 1 tablespoon of olive oil
  • 1 cup of onions, chopped
  • 2 garlic clove, minced
  • 8 oz. button mushrooms, sliced
  • 1 lb. of ground turkey
  • 2 28oz. cans of whole plum tomatoes {with sauce}
  • 2 tablespoon of tomato paste
  • 1 cup of fresh basil, chopped
  • salt & pepper
Instructions
  1. Run 3 large zucchini's through a spiralizer to create noodles. {if you do not have a spiralizer you can use a grater} Set aside.
  2. Heat a large saucepan to medium high heat.
  3. Add 1 tablespoon of olive oil to pan then the chopped onions. Saute until translucent, about 2-3 minutes.
  4. Next add minced garlic cloves, saute for 30 seconds and add sliced mushrooms.
  5. Cook until mushrooms are browned, about 4-5 minutes.
  6. Next add ground turkey and saute until cooked through, about 5-6 minutes.
  7. Add whole plum tomatoes and 2 tablespoons of taste paste, break up the tomatoes with a spoon in the pot. Season with salt & pepper to taste.
  8. Simmer sauce for 10 minutes.
  9. In the meantime, heat a large skillet to medium high heat. Add 2 tablespoons of olive to oil.
  10. Immediately add the zucchini noodles and flash saute them for 2-3 minutes, stirring the whole time.
  11. Remove from pan and let sit, drain any excess water from the noodles.
  12. Finish off the meat mushroom sauce with freshly chopped basil.
  13. Serve zucchini noodles with meat mushroom tomato sauce.
