Turkey Bacon & Spinach Frittata Recipe

Turkey Bacon & Spinach Frittata Recipe

Ok, I admit it. I’ve never made a frittata before. I’ve always wanted to try it, but they just sounded so intimidating to me at first. I mean the name itself is snooty and hard to say. Fri-tta-ta…. just sounds intimidating. (ok, mild lion king moment.. Muffasa! ohhh) Back to the point, Frittatas always kind of scared me as did quiches. So I thought it was time to face my fears and try it out.

Turns out they are not as scary as they sound. All you have to do is sauté a couple of ingredients, add the egg mixture, let is sit for a bit, and then throw it in the oven. Can I just say that I might be making Frittatas every Saturday morning from here on out! My husband liked is so much he coined a name for the frittata and is hoping it will catch on with our kids. He calls it… wait for it.. the “breakfast pizza”. Either way, this frittata or “breakfast pizza” is delicious!!! Even my 1 year old little boy loved this Turkey Bacon & Spinach Frittata. And if he likes it, then I KNOW you will.

How to Make The Perfect Turkey Bacon & Spinach Frittata

To get started, pre-heat your oven to 350º. Then heat a medium sized oven safe skillet to medium high heat. Slice 8 strips of turkey bacon into thin strips.

Add 1 T. of cocount oil to pan and then turkey bacon strips. Saute until crispy. Then add 1 1/2 cup of fresh spinach.

Saute until cooked down. In a separate bowl, whisk 8 eggs and 1/2 cup of 2% milk.

Add milk mixture to turkey pan.

Stir ingredients together and let sit for 4 minutes. Top with 3 oz. of crumbled goat cheese and 1/4 cup of chopped chives.

Put pan in 350° oven for 10-12 minutes, or until frittata has set. {if you shake the pan, the eggs do not move}. Slide frittata out of pan onto a cutting board and serve!

  • 8 strips of turkey bacon, thinly sliced
  • 1 T. of coconut oil
  • 1 1/2 cup of fresh spinach
  • 1/4 cup chives, chopped
  • 3 oz. goat cheese, crumbled
  • 8 eggs
  • 1/2 cup of 2% milk

Instructions

  1. Heat medium sized oven safe skillet to medium high heat.
  2. Slice turkey bacon into thin strips.
  3. Add cocount oil and turkey bacon slices to pan. Saute until crispy.
  4. Then add fresh spinach.
  5. Saute until cooked down.
  6. In a separate bowl, whisk eggs and milk.
  7. Add milk mixture to turkey pan.
  8. Stir ingredients together and let sit for 4 minutes. Top with crumbled goat cheese and chopped chives.
