Tex-Mex Chickpea Salad
Welcome to another edition of Mystery Dish!!! {Ok..on a side note whenever I start these Mystery Dish posts I always feel a little like a TV game show host}
So.. Let’s recap, shall we? Last month we had some crazy ingredients given to us and this is what the outcome was…

This month proved to be more of a challenge. Partly because I made a recipe earlier this month, Cilantro Lime Quinoa with Black Beans, that I posted and didn’t realize I could have used it for this month’s Mystery Dish. But also, because for whatever reason I was struggling to be creative with the ingredients this time around.
I was forced to put on my thinking cap this month and came up with this beauty, Tex-Mex Chickpea Salad. P.S. in case you didn’t know Chickpeas are the same thing as Garbanzo Beans. 🙂
Jen, over at Yummy Healthy Easy, was our host for this month. She threw down gauntlet and gave us a challenge with these Mystery Ingredients: Garbanzo Beans, Eggs, Flax Seed, Cilantro, Potatoes, Lime, Bread, Quinoa, Popcorn, Dark Chocolate, Ground Turkey, and Asparagus. The challenge… use at least 2 of these ingredients in a dish. But if your like me you try to use more. 🙂 {I used garbanzo beans, cilantro, and lime}
This Tex-Mex Chickpea Salad can be made in less than 5 minutes and has such a light and fresh flavor! It would be a perfect side dish for those summer grilling nights with the fam or the weekend Potluck your next neighbor is planning! 🙂
How to Make The Best Chickpea Salad
To get started, drain and rinse one 15oz. can of chickpeas {also known as garbanzo beans} place in a small bowl.
Add 1/2 cup of diced yellow peppers, 1/2 cup of diced roma tomatoes {seeds removed} and 1 /4 cup of chopped fresh cilantro. Toss.
Next add in the juice of 1 large lime, 2 teaspoons of olive oil, and salt and pepper to taste. Serve.

Ingredients
- 1 15oz. can of chickpeas, drained and rinsed
- 1/2 cup of yellow pepper, diced
- 1/2 cup of roma tomatoes, diced {seeds removed}

- 2 teaspoons of olive oil
- salt & pepper to taste
Instructions
- Add chickpeas {also known as garbanzo beans} into a small bowl.
- Add diced yellow peppers, diced roma tomatoes {seeds removed} and chopped fresh cilantro, juice of a large lime, olive oil, and salt & pepper.
- Toss to coat everything and serve!

I actually have a can of garbanzo beans right now…and this seems like a great way to use them! I like that this is both flavorful, and quick to whip up. Love love this salad!!! The tex mex spin is amazing and all that lime and cilantro š I can even imagine making it a little spicy with some chili powder (because I have a problem) and still being delicious!
