Easy 10 Minute Strawberry Spinach Salad Recipe

Easy 10 Minute Strawberry Spinach Salad packed with juicy strawberries, pecans, red onion and feta then drizzled with light White Balsamic Vinaigrette for the ultimate bite. This quick refreshing salad is perfect for summer and a great side dish for those backyard BBQs.

Best Ever Strawberry Spinach Salad

I don’t know about you, but I’m always on the lookout for dishes to bring to that next summer BBQ. Usually I’ll bring my Creamy Bacon Potato Salad or my Asian Cucumber Salad. But with all the fresh summer produce, anything with berries is a must!

Our family is a huge fan of strawberries. We go through like 4 cartons a week! I use them in just about anything, a strawberry salsa over salmon or a frozen strawberry margarita. But this 10 minute Strawberry Spinach Salad is the stuff dreams are made of! You’re definitely gonna want to bring this to your next summer get together. Just add protein and it’s a meal!

Ingredients you’ll need for this Recipe:

This Strawberry Spinach Salad is one of my favorites to make when strawberries are in season. It is always a hit with a combination of salty and sweet. Here are the ingredients you’ll need for this easy summer salad.

  • Strawberries – The piece de resistance of the summer – fresh sweet juicy strawberries. These are the star of this gorgeous summer salad. I like to cut mine in slices and quarters for a variety of sizes.
  • Spinach – This leafy green pairs well with strawberries and is loaded with nutrients.
  • Pecans – Some recipes have these toasted or candied, but since it’s the summer we’re gonna go all natural and use raw pecans in this salad.
  • Red Onion – I use red onions in this salad because I find them to be a little sweeter and less in your face than yellow onion.
  • Feta Cheese – For a bit of salty mixed with all that sweet, feta is the perfect cheese for this salad.
  • Basil – Fresh lemony basil brightens everything up.
  • White Balsamic Vinegar – I love to use white balsamic in the warmer months because I find it’s a little lighter but still gives you that classic balsamic taste.
  • Olive Oil – You’ll need this for the dressing, use cold pressed extra virgin olive oil.
  • Garlic – No recipe is complete without this rockstar.
  • Honey – Just a little bit to help thicken up the dressing and cut through the mustard.
  • Mustard – Adding a bit of tang to the dressing. I like dijon or stone ground mustard.

How to Make Strawberry Spinach Salad

You gotta love it when a recipe comes together in 10 minutes! No cook time. Just a few slices, a whisk of the dressing and you’re good to go. Here’s how to make this easy strawberry spinach salad

  1. Make the Dressing: To a small bowl add garlic, dijon mustard, honey, white balsamic vinegar, olive oil, fresh basil, salt and pepper. Whisk vigorously until the oil and vinegar emulsify – no longer separate. Set aside.
  2. Prep Fruit: Hull strawberries and slice or quarter them. Then thinly slice the red onion. 
  3. Assemble Salad: To a large bowl add spinach, strawberries, raw pecans, red onion and feta cheese.
  4. Serve: You can coat and toss the salad with the dressing or serve the dressing on the side.

What dressing to serve with Strawberry Spinach Salad?

I’m a sucker for a good balsamic vinaigrette and I feel like it pairs really well with this spinach salad. However, I’ve also served it with these dressings as well and it’s been amazing. Honestly, you can’t go wrong.

Can this Spinach Salad be made in advance?

Yes, you can absolutely make this strawberry spinach salad in advance. Prep all the components of the salad and store in separate containers in the refrigerator. Then, when you are ready to serve, just toss everything together and serve.

As a side note: I usually never had next day salad if it is dressed. (meaning the dressing is poured on) I find that once you add dressing to a salad you need to eat it immediately or the greens will wilt. At times, I like to serve the dressing on the side and allow people to add their own amount. This also allows you to keep it the next day instead of it becoming soggy from the dressing.

Strawberry Spinach Salad:

  • 1 1/2 cups of strawberries, sliced or quartered
  • 1/2 cup halved pecans
  • 1/3 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 10 oz. of spinach

White Balsamic Dressing:

  • 1 garlic cloves, minced
  • 1/2 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1/4 cup of white balsamic vinegar (or you could use balsamic)
  • 1/4 cup of olive oil
  • 2 tablespoons fresh basil, chiffon
  • salt & pepper to taste

Instructions
