How do you process pain, hurt, or loss in your life?

A couple weeks ago we gathered in a park late at night, decorated lanterns and set them off to fly through the sky. We did this on Pregnancy and Infant Loss Remembrance Day. Three years ago we lost my sweet niece Zoe to SIDS and the year before that Mike and I had a miscarriage at 10 weeks.

There have been many time when we’ve talked about walking through these hardships. The one thing that always sticks with me are the words my brother in law spoke on the radio one time as they were discussed dealing with grief and how to move forward in the midst of the hurt.

He said, “We celebrate Zoe’s life, we celebrate the gift of life that God gave us for those 3 months, and we accept the gift of pain that God has given us as well because it has showed us new things about God that we would not have otherwise learned. So even though we have pain, we know that it is a gift that God has decided to give to us.”

As soon as he said that my mind started to turn. Pain as a gift?

I immediately started to think through the pain that Mike and I had been going through those 4 years we struggled with getting pregnant! Every month my heart would get hopeful that maybe this would be the month that God decides to bless us with a child and every month that was not the case.

For a while I just didn’t understand. But what I do know is that God had a plan for me and Mike that I didn’t know about. Just like he had a plan for my brother-in-law and sister-in-law. Sometimes that path is pain, heart break, and loss.  Sometimes that path is success, joy, and blessing. Either way, they are gifts from God.

Why do we see the “gifts” that God gives us only as good things and not bad?

Is it not a gift that through this time of pain and waiting on a second child that I have become more dependent on God? That I have been letting go of control and realizing that my plan does not supersede His plan?

To me that is a gift, I have found comfort in the midst of sorrow. And every time someone else I knew got pregnant I just had to remind myself that God is good.

So after thinking about the comment of “pain is a gift” I now understand what my brother-in-law meant. Gifts are gifts, some are easier to accept than others. Sometimes you want to ‘return that one gift to the store’ and sometimes you want to rip open the box and play with it right away. Regardless they are all gifts!

And now my brother and sister in law have another beautiful baby girl and I am carrying one now! God is good and restores those times of pain and hurt.

Just some more thoughts that were on my mind this weekend.

Ok, so on to the recipe for today.

I am a total granola fanatic… I love to have me some yogurt and granola in the morning. In fact, it’s usually my breakfast every morning. Since I love granola and I love pumpkin why not create something with both of my favorites in it. Um… chellloo?

Homemade Pumpkin Spice Granola… OMG seriously addicted to the stuff y’all.  I think I had it for breakfast, lunch, and snack all week last week! And when I like something I tend to hoard it. I noticed that Mike took some one morning and I scolded him.. bahaha. Kinda felt like Joey from Friends… “Krista doesn’t share her granola!!!”

But I figured if I need to teach my son how to “share”  I should probably model it myself first, which I why I made a double batch today. One batch for me and one batch for Mike. 🙂 hehe

This Pumpkin Spice Granola takes about 5 minutes to mix up and then 30 minutes to bake. But the after product is totally amazing! It has sweetness from the maple syrup, a slight pumpkin taste {yummers!}, and then rich spice flavors from the cloves, nutmeg, allspice, and cinnamon. What more could you ask for in a granola? Nothing… it is absolutely perfect!

So go out and buy a can of pumpkin puree or make some yourself… and get this Pumpkin Spice Granola made.. pronto!

Ingredients

Scale
  • 2 cups of old fashioned oats
  • 1/3 cup of raw pecans
  • 1/3 cup raw pepitas (pumpkin seeds)
  • 1/4 cup of dried unsweetened cranberries
  • 1 teaspoon of pumpkin spice seasoning
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 2 tablespoons of coconut oil
  • 1/2 cup of maple syrup
  • 1/3 cup of pumpkin puree
  • 1 1/2 teaspoon of vanilla extract

Instructions

  1. To get started, preheat oven to 325 degrees.
  2. In a large bowl mix, old fashioned oats, pumpkin spice seasoning, ground cinnamon, salt, pecans and pepitas.
  3. In small bowl, add pumpkin puree, coconut oil, maple syrup, and vanilla extract. Whisk together.
  4. Pour wet ingredients over dry ingredients, toss to coat and make sure everything is covered.
  5. On a baking sheet, place either a silicon mat or parchment paper. Then spread the granola mixture across the entire pan.
  6. Bake for 25-30 minutes, turning the granola every 10 minutes so it doesn’t burn.
  7. Remove from oven and let cool. Toss cranberries in at the end.
  8. Serve.
