The more I travel and meet up with the friends I’ve made through blogging the more I realize how much we as people need community. We need someone who understands the things that we’ve been going through. That can relate to the struggles we have and can support us in those struggles. But we also need someone strong enough to call us up out of the “rubble” of life and challenge us to positive thinking. We can’t walk through life alone, it’s too hard.
Life is totally a journey. It’s like a road that we are constantly driving on. Sometimes that road is bumpy, sometimes that road is smooth, sometimes it’s winding out of control, and sometimes it’s straight as an arrow. Those winding and curving times are the times we need that community to lift us up and encourage us to push on to that straight road that’s just around the corner.
I want to be that person. It’s easy to be someone that listens and sulks with someone when they are going through a hard time. Misery loves company. But it’s another thing to look them in the face, say I’m sorry but give them hope! THAT is life changing and those are the friends I want in my life. Someone to speak the hard facts and love me.
I feel like I have those friends in my life and my prayer is that I am that person to my friends.

This Mashed Potatoes are all kinds of yummy and really easy to make. It’s a great healthy way to put a slight twist on the classic mashed potatoes for your holiday dinner table.
Parsnips are a root vegetable and taste kinda like a cross between potatoes and carrots with a slight spiciness. But when you add butter, a touch of milk, grated garlic, and chives they taste absolutely divine.
These are probably the creamiest mashed potatoes I have ever made and the most unique. I have actually made them three times already and have fallen in love with them so I know you will too! I recently served them with a Beef Bourguignon that I made with Bison and OMG sooo good! (cannot wait to share that recipe with you)

- 4 parsnips, peeled and roughly sliced
- 4 yukon gold potatoes, peeled and roughly chopped
- ½ cup 2% milk
- 1 tablespoon unsalted butter
- 1 garlic clove, grated
- ¼ cup fresh chives, sliced
- salt to taste
- To large pot add parsnips, potatoes, and water until the vegetables are just covered.
- Bring water to a boil and reduce to simmer. Cook vegetables until they tender enough to pierce with a fork. About 8-10 minutes.
- Drain water from the pot.
- Add vegetables to a food processor (or blender). Add milk, butter, grated garlic, and salt to taste. Blend until smooth.
- Add in the chives and serve!
