I feel like most people either love them or hate them!

Me … I love them. I could eat them in almost everything!

They add so much richness and depth to any dish and are a great substitute for meat if you are wanting a vegetarian option.

Todays recipe however is not a vegetarian dish, we all about the chicken today and building in some good flavors to support it!

Chicken by itself can be good if you do something snazzy with it, like grill it. (yes I know thats my answer to everything, but you know what? It works!)

Usually its one of my go to dishes. I’m not a huge fan of red meat and sometimes fish is just expensive so that leaves us with chicken.

If your gonna have chicken alot (like me) you gotta change up the preparation a bit, too much of the same old thing just gets.. well… old!

If you’ve been following Joyful Healthy Eats for a while you know that I don’t like the plain jane thing. I like to amp things up by layering flavors to really make a dish that pops on the first bite!

Even though I like to layer, I’m also all about the easy recipes. None of this hour and half cook time stuff.. unless of course its in the crock pot. That I’m ok with because I’m not doing any of that work, the crock pot is!

Ok, back to this Pan Seared Chicken Recipe. Most of the time when I am cooking chicken I will either grill it or bake it. But the other day I just had this idea of a wild mushroom sauce and the chicken cooking in it. So pan seared chicken it is.

You can actually get some good flavor action going on with a nice pan sear. You just need to make sure that the pan is screaming hot so that the chicken sears right away and locks in all the flavor!

The best part about a good sear is it leaves all these brown bites in the bottom of the pan.

Don’t leave those brown bits behind!!! They are begging to be included in your dish.

I seared the chicken removed them from the pan and then add my layering ingredients. First up, onions because everything is better with onions. (if your not a fan of onions use shallots, they have a milder taste). Next up garlic and lemon juice, this is where all those brown bits come off the pan which makes them happy and your tummy happy in the end. Next up mushrooms!! (aka the star of this chicken dish) After the mushrooms add a little fresh thyme, some chicken broth, and then some arrowroot to thicken up the sauce. I learned this arrowroot trick from one of my favorite bloggers Mike at The Iron You, its a great gluten free and paleo friendly substitute for corn starch.

Description

A full flavor Pan Seared Chicken recipe cooked in a Wild Mushroom Sauce seasoned with fresh thyme and lemon juice.


Ingredients

Scale
  • 2 tablespoons of coconut oil
  • 3 chicken breasts, skinless & boneless {cut in half}
  • 1 cup of onion, diced
  • 2 garlic cloves, minced
  • 1 lb of cremini mushrooms, sliced
  • 1/2 lb. of shitake mushrooms, stemmed removed and then sliced
  • juice of 1 lemon
  • 2 tablespoons of fresh thyme, chopped
  • 2 1/2 cup of low sodium chicken broth
  • 3 tablespoons of arrowroot

Instructions

  1. Heat a large skillet to medium high heat.
  2. Season chicken breast with salt & pepper.
  3. Add in coconut oil and chicken breasts, saute for 5-6 minutes per side.
  4. Remove chicken from the pan and place on a plate.
  5. Next add onions to the pan. Saute fro 3-4 minutes until translucent.
  6. Add in garlic, saute for 30 seconds and then add lemon juice. {be sure to scrap brown bits off the pan leftover from the chicken}
  7. Add in the cremini and shitake mushrooms, and fresh thyme.
  8. Saute for 10-15 minutes, until mushrooms have softened and started to brown.
  9. Add in the chicken broth and season with salt & pepper to taste.
  10. Bring to a boil, then reduce to simmer.
  11. In a small bowl, mix together 3 tablespoons of arrowroot with 1/2 tablespoons of water.
  12. Add arrowroot mixture to the broth mixture. Whisk in to combine.
  13. Let simmer for 3-4 minutes, until thickened.
  14. Add chicken back into pan with the mushroom mixture, cover and let simmer for 3-4 minutes.
  15. Serve!

    What a beautiful dish, it will be dinner in our house this week, for sure. We have the most amazing mushroom stand at our farmer’s market and I’m always looking for an excuse to visit!






    1. Oh for sure!! Farmers Markets are my favorite, you are lucky we don’t have a good one by use. When I was growing up there was a huge one like 20 minutes from us so we use to on saturday and it was a blast. Munch while you shop, nothing better! Hope you enjoy this Sue!
