Well right now, we probably just landed in Houston. The past 10 days we’ve been in Cuenca, Ecuador visiting my husbands brother and his family.

I hope you guys were following along on Instagram stories because I was uploading tons of fun activities! Including a flight into the Jungle to visit the Wauroni indian tribe! Sooo stinkin cool!

Our time in Ecuador has been awesome. We started in the jungle for 3 days and then headed back to Cuenca the rest of the time. It has definitely been a trip Cason will remember the rest of his life.

He absolutely LOVES his cousins and has spent almost every waking minute with them. Performing shows for the parents to watch, building lego towns, playing power rangers, ninja turtles, swimming in the mud baths, running through the jungle, and basically everything you can think of. He is definitely going to be heartbroken when we leave … I’m sure there will be tears.

Even though this trip has been incredible, and I’m sure you will hear more about it over the next couple of posts. I am glad to be home. Back into a routine, back to the gym, back to our community, back to life. We celebrated New Years in Banos and have been gone since then. So I really don’t feel like the “new year” started for us yet.

I started some goals for 2017 and opened my new planner (which always makes me giddy). But I’m excited to hit the ground running for a new year and new goals … starting … tomorrow. Because today I am going to be exhausted from all the flights and customs. 🙁

One of my goals this year is being consistent with making snacks to have on hand for a quick bite! Things like energy bites, homemade granola, or granola bars.

In my opinion you can never have too many energy ball recipes! They are quick, easy to make, packed with flavor, and usually only have a few ingredients. My favorite are the ones that have peanut butter and/or chocolate in them. But after making these Oatmeal Cookie Energy Balls, those Peanut Butter Balls have some competition!

To be honest, anything that has the words “Cookie” in it I’m probably going to try .. and you know it’s also going to be good! These No Bake Oatmeal Cookie Energy Balls are loaded with hearty oats, almond butter, raisins, cinnamon, and maple syrup. They are down right addicting and definitely taste like a cookie … which means. Hello late night snack!

These are perfect for a grab and go breakfast, a post workout snack, or a fun surprise for your kiddos lunch.

Oatmeal Cookie Energy Balls

Description

An easy and healthy snack or on-the-go breakfast option filled with hearty oats, maple syrup, and sweet raisins. These energy balls taste just like an Oatmeal Cookie!


Ingredients

Scale
  • 2 cups of old fashioned rolled oats
  • ½ cup of ground flax seed
  • 1 tablespoon of black chia seeds
  • 1 1/2 teaspoons of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 cup of maple syrup
  • 1/2 cup of almond butter
  • 1 teaspoon of vanilla extract
  • 1 scoop Vanilla Protein Powder
  • 1/2 cup of raisins

Instructions

  1. Add rolled oats, ground flax seed, chia seeds, cinnamon, nutmeg, maple syrup, almond butter, vanilla extract, and vanilla protein powder to food processor.
  2. Pulse until ingredients are blended. (about 10-12 times)
  3. Add mixture to a large bowl, add in raisins. Stir to combine.
  4. Form energy bite mixture into 1″ balls and place on parchment paper lined baking sheet.
  5. Cover and place in refrigerator for 2 hours.
  6. Serve!

    1. There is a scooper in your protein powder container and that’s the scoop I’m referring too. Typically mine is about 1/4 cup though.

  1. Oh how I wish I could find a protein ball recipe without almond butter or peanut butter! It’s so difficult with nut allergies, any ideas for substitution? Ps. Fake peanut butter is just awful!
