So yesterday I most definitely felt like a mother. Have you ever had one of those days? I can remember a few specifically as Cason has been growing up where I really felt like a mom. The first time Cason peed on me, I felt like a mom. The first time he fell, bonked his head and all he wanted was momma, I felt like a mom. Now, I know that I am a mom all the time. But there are just some days where I REALLY feel like it. Yesterday was one of those days. I’m not sure what was going on with the little guy but he threw up 3 times yesterday in 2 hours. Two of those times I had to change because it got all over me and the couch and Cason! Gross. Lunch came around and he seemed to be doing much better. I even got a grocery store trip in without an incident. Dinner came around… same thing. He was still his happy self and even played with some visitors that stopped by. Bath time came and went and then bedtime. 🙂 I usually like to get some cuddle time in with him right before I put him down. So I picked him up, went into his room, gently patted him on the back, and started praying for him and…. yup… throw up all over my back, down my side, and the chair. NICE!!! Perfect ending to the day. 🙂 So, all in all, yesterday I definitely felt like a mom. What are your stories? I’m sure you have some crazy ones too! It’s definitely fun to remember those times and laugh, especially as Mothers Day is fast approaching. I wonder what stories your mother has about you? {I plan on asking mine this weekend :)}

I’m sure most families have traditions on Mothers Day. On Mothers Day in our house, we usually went out to brunch with my mom’s side of the family. It was always a blast, mostly because my Uncle is a little cray cray but also because it was family. My mom is a huge fan of mushrooms, so in honor of her I made a Mushroom & Cheese Frittata that I think would be a perfect healthy dish for a Mothers Day Brunch Menu. I hope you enjoy!

How to Make a Mushroom & Cheese Frittata

To get started preheat your oven to 350º. Heat a medium sized oven safe pan to medium high heat. Add 1 T. of olive oil and 6 oz. of sliced mini portabella mushrooms to pan.

Mushroom & Cheese Frittata 1

Saute until mushrooms a just browned, appoximately 4-5 minutes. Add 1/2 tsp. of salt and 1/4 tsp. of pepper. Meanwhile in a small bowl, mix 8 eggs and 1/2 cup of milk. Whisk until combined. Add egg mixture to mushroom pan.

Mushroom & Cheese Frittata 2

Stir to incorporate all ingredients. Top with 4 oz. of crumbled cream cheese and 4 green onions thinly sliced.

 

Mushroom & Cheese Frittata 3

Let cook for 4 minutes on stovetop. Move pan to oven for 10-12 minutes.

{or until the frittata has set, it will not wiggle in the pan} Serve plain or with Homemade Roasted Tomata Salsa. {I could eat salsa on everything}

  • 6 oz. mini portabella mushrooms, sliced
  • 1 T. olive oil

  • 4 green onions, thinly sliced
  • 4 oz. of cream cheese, crumbled
  • 8 eggs
  • 1/2 cup of milk
