Growing up in Wisconsin I was no stranger to the tailgating atmosphere.

If you go to a Milwaukee Brewers Game, Wisconsin Badgers game, or especially Green Bay Packers game tailgating was how you mentally prepared yourself for the game. Or at least thats what I was told.

Tailgating is a must!

How do Wisconsinite’s prepare for the big game?

Beer. Cheese. Brats. Burgers.

That about sums it up. Pretty plain and simple right?

Well, now that I married and have my own way of doing things when we throw a “tailgating” or football party I am anything but plain in my menu.

Now don’t get me wrong, I still like a good Old Fashion Beer Brat. But sometimes its just fun to up your game a bit and bring out the food “big guns”. Which is what I’m doing today!

If your tailgating, your gonna get the eye if you bring a gas grill with you.

Who does that? Um… no one!

When you’re tailgating you bring your small Weber grill and Kingsford Charcoal! Those are basically the “haves” of the tailgating industry. Plus there is no way to compare the flavor you get from charcoal, it basically blows gas grills out of the water.

Only downfall is it takes a while for the coals to warm up, but thats why you have a beer. Right? It helps with the waiting game. 🙂

So back to the “up your game” tailgating recipe I have for ya’ll today.

Are you ready? Your gonna need to brace yourself because this recipe is the bomb.

Its Grilled Ribeye & Roasted Pepper Bruschetta with Whipped Goat Cheese! {mouth dropping in utter shock}

I know right! The crunch bread, creamy goat cheese, tender Ribeye, and sweet grilled roasted peppers, yup… its amazing!

Believe me it is just as good as it sounds and seriously super easy. Best part is, everything is made on the grill except for the whipped goat cheese of course. 🙂 And you can get all of the ingredients, including the charcoal, for a steal at Walmart! Do you like deals, because I know I do!

So the next time you have a tailgating party and decide to just make burgers. Take a step outside the “same old same old” box and take your tailgating part to the next level.

Grilled Ribeye & Roasted Pepper Bruschetta with Whipped Goat Cheese

Description

The ultimate fancy appetizer, Grilled Ribeye and Roasted Pepper Bruschetta served on top of crunchy grilled bread and a whipped goat cheese spread!


Ingredients

Scale
  • 4 oz. goat cheese, softened
  • 4 oz. cream cheese, softened
  • 1 red pepper
  • 1 yellow pepper
  • 2 Walmart USDA Choice Ribeye’s
  • salt & pepper for seasoning
  • 1 loaf of crunchy bread {I used an italian round, but you could also use french bread}, cut into slices
  • 1/2 cup of chives

Instructions

  1. Heat charcoal to 400 – 450 degrees.
  2. Add whole bell peppers to the grill. Grill for 4-5 minutes per side.
  3. Remove from the grill and place in a bowl, cover with plastic wrap and let sit for 5 minutes.
  4. Remove the skin from the bell peppers and julienne.
  5. Season steaks with salt & pepper. Place on the grill and grill each side for 4-5 minutes. Remove from grill and let sit.{do not cut until you are about to assemble the bruschetta}
  6. Place bread slices on grill and grill for 1-2 minutes per side. Remove from grill and let sit.
  7. In a food processor add goat cheese and cream cheese. Blend until completely combined and cheese looks somewhat “whipped”. About 1-2 minutes.
  8. Assemble brushcetta, spread whipped goat cheese on grilled bread, add a few slices of the roasted pepper, add thinly sliced steak, and top with chopped chives.
  9. Serve… devour… and repeat!
