Crunchy Coconut Oatmeal Chocolate Chip Cookies made with oatmeal, chocolate chips and coconut flakes. These healthy chocolate chip cookie alternatives are so tasty, you may never go back to your classic cookie recipe!

Coconut Oatmeal Chocolate Chip Cookies

Ok, so if you have been following me for a while you may know. I love to eat healthy food, but I’m also not one to turn down a big chocolate chip cookie staring me in the face. 🙂 I like to have chocolate chips in the house at all times just in case I {I mean my husband} gets the urge for a chocolate chip cookie. That way I can whip up a quick Raspberry Chocolate Chip Cookie or my favorite Banana Chocolate Chip Cookies, whenever I want.

Last week I was watching the Pioneer Woman on the Foodnetwork and she was making all kinds of cookie recipes. Which of course, if your human, will make you want to eat cookies. I was trying to think of a way to make cookies that would tell me husband “I’m thinking of you” even though I was really thinking of me and my cookie craving. {don’t judge!} I came up with this Coconut Oatmeal Chocolate Chip Cookie. Mike loves fruit added to his cookies, usually its raspberries but he also loves coconut.

I like to use the unsweetened coconut because with the sugar and chocolate chips in the cookie I find it is already sweet enough. These cookies are absolutely amazing. You feel healthy because the majority of the cookie is oats, then you get slight tastes of sweet from the coconut and chocolate chips.  Its a great change up to the plain old chocolate chip cookie.

How to Make Oatmeal Coconut Chocolate Chip Cookies

To get started, preheat oven to 350°. In a large bowl, mix 1 1/2 cup of regular oats, 3/4 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of cinnamon, and a pinch of salt. Mix to combine.

  1. Oh my goodness, these are heavenly! I confess that because I did not have all purpose flour on hand, I substituted whole wheat flour. They still turned out wonderfully!

    1. I’ve made them with whole wheat before too, they are awesome either way Donna! So glad you enjoyed them!

  2. Every red-blooded American boy knows there are no ways to improve the tollhouse chocolate chip cookie. Coconut is mere chickification. The only conceivable improvement is for mom’s or the boys (like I did) to make dozens more in their kitchens. Lotsa milk, too.

  3. These cookies are delicious. I have made four batches in the last two weeks. We have had a number of guests in our home recently and these cookies are a big hit. It’s a really simple recipe which makes it a double gold star. Yummy!

    1. haha… that just made my night. Thank you so much for letting me know! Glad you AND your house guests are devouring these!

  4. Hi Krista,
The recipe says to use regular oats but the photo shows quick cook. Do you mean regular as opposed to steel cut?
    Thanks!

    1. Hey Rena, I only had quick cook oats in the pantry so I used that but I make this recipe with regular oats normally. So yes, use regular oats not steel cut. 🙂 Hope that helps girl, and GOOD EYE! 🙂

  5. These look sooooo yummy! I love chocolate chip cookies too, so this will be a slightly more healthful way to indulge. Stopping by from SITS! 🙂

    1. Me too girl! Plus, my son AND husband love them too. So I had to figure out a slightly healthier way to make them or we would end up 40+ overweight. YIKES. 🙂 Thanks for stopping by on my SITS day. Hope you have a great rest of the week!

Oh my! Oatmeal cookies happen to be our favorite in the house. I never thought of putting coconut in with it. I bet the texture is beyond yummy! (You and your Food Network…I can’t get enough of it as well. It’s on all weekend for me.) Already pinned these babies! Have a happy Monday, sista!

    1. You totally need to put coconut in it.. you could enjoy sub coconut oil in for the butter and make it extra coconutty! 🙂

Thats right, mmy name is Krista and I’m foodnetwork addict. I find it to be inspiring. 🙂 Usually our weekends consist of playing at the park and football watching, so its on during the week for me. Usually around dinner time. 🙂 hehe Hope you have a great rest of the day my friend, thanks for stopping by!
